This recipe is very versatile, as you can make the dough in individual hand pockets or one large loaf.
The dough can be filled, made with an empandas maker, folded over like a hand pie with the edges crimped or rolled and placed seam down.

BBQ Chicken Pizza Roll
BBQ Chicken Pizza Roll is stuffed with delicious shredded chicken oozing with cheese and bbq sauce.

Ingredients
- 1 pound pizza dough (store-bought or homemade)
- BBQ Chicken Roll Filling:
- 1 1/2 cups cooked chicken, shredded ( I used leftover rotisserie)
- 1/2 cup BBQ sauce (plus extra for dipping)
- Note: For those who don't prefer BBQ, refer to our notes for substitutions
- 1 cup shredded Mozzarella, Swiss or Gouda cheese
- 1/2 cup extra sharp shredded cheddar cheese
- Optional: cooking oil spray, olive oil, granulated garlic powder
Instructions
- Preheat the oven to 400 degrees and line a baking sheet with parchment paper.
- Mix the chicken with the BBQ sauce or another preferred sauce and set it aside.
- Roll out each pizza dough around 1/2 thick.
- Spoon around 2 tablespoons full of chicken in the center, and sprinkle with cheeses.
- Note: For individual pockets, cut the dough into 4 equal pieces.
- Fold the dough over and crimp the edges using fork tines.
- Brush the top of the roll or each pocket with olive oil or cooking spray, then sprinkle with garlic powder if using.
- Place the rolls on a baking sheet and bake at 400 degrees until they are browned for around 25 to 30 minutes or one large for around 45 minutes.
- Serve with more sauce on the side.
