Lasagna is a special meal in our Italian household and very much adored especially Mom's Homemade Lasagna recipe but today we took this classic and made it into an American Italian lasagna roll-up for a fun simple meal.

This all-in-one pan recipe is fun to make, and so easy to serve because every person gets their own saucy rolled-up lasagna spiral.

The filling can be anything from just cheese, to a variety of loose cooked meats, even just cheese or vegetables plus these freeze perfectly for individual servings!.

A complete meal in one casserole dish, great for potluck, or on a buffet table when hosting a dinner party.

Easy Lasagna Roll-Ups



Tips for Easy Lasagna Roll-Ups:

  • Use any kind of frozen meatballs crushed or make your own recipe for seasoned ground beef meatball mixture.
  • Adding a little fennel seed ( around 1 teaspoon) will make the ground meat taste more like sausage.
  • These roll-ups can be made two days ahead of time and then just heated when ready to serve.
  • For vegetarian lovers, add a layer of thin-sliced zucchini, eggplant, or peppers instead of meat.
  • Cook any loose meat in a pan and season with salt, and pepper before adding to the roll-ups
  • Use escarole boiled or other greens if you're not fond of spinach

Easy Lasagna Roll-Ups Shopping List of Ingredients You Will Need

  • spinach frozen and thawed or cooked ground beef or loose sausage or a combination 
  • cooked lasagna noodles
  • a handful of fresh parsley
  • Italian Meat Sauce
  • shredded mozzarella
  • salt, pepper, granulated garlic powder to taste
  • grated Pecorino Romano blend Parmesan cheese
  • olive oil or canola oil for cooking
  • whole milk ricotta

Vegetable and Meat Additional Suggestion for Lasagna Roll-Ups:

  • All vegetables should be diced fine
  • Artichoke hearts drained
  • Thinly sliced eggplant
  • Thinly sliced zucchini
  • Sliced fresh tomatoes
  • Thinly sliced mushrooms
  • Julienne peppers
  • Steamed chopped broccoli
  • Steamed chopped cauliflower
  • All meat must be cooked first:

Easy Lasagna Roll Up Casseroles



We love easy recipes like this one all-in-one pan.

This casserole is a fun addition to a buffet table when hosting a party for individual servings.

Easy Lasagna Roll Ups

These are a fun way to serve lasagna noodles. These are filled with a variety of meat, cheeses, or spinach then swimming in tomato sauce topped with melted mozzarella cheese.

Ingredients

  • 1- 16 ounce package of lasagna (boiling kind)
  • 2 -16 ounce containers of whole milk ricotta cheese (drained through a cheesecloth or use a coffee filter)
  • 2 eggs, beaten
  • 2 tablespoons chopped fresh flat-leaf Italian parsley
  • 1/2 cup grated blended Pecorino Romano and Parmesan cheese
  • salt and pepper to taste
  • 1/2 teaspoon granulated garlic powder
  • Additional Filling Options: 2 10-ounce packages of spinach, thawed, drained, and blotted dry with paper towels be sure to squeeze out all the water, or 2 cups of meat of choice (thin slices of pepperoni, loose cooked sausage or crushed meatballs fresh or frozen thawed and crushed)
  • 4 cups shredded mozzarella cheese; divided
  • 2 jars of tomato meat sauce or make your own homemade Italian meat tomato sauce

Instructions

  1. Preheat the oven to 350 degrees and Lightly oil spray a 13 x 9 baking casserole pan.
  2. Boil the lasagna according to package instructions, drain, and immediately toss it with a small amount of olive oil to coat the noodles to keep them from sticking together.
  3. In a medium-sized bowl, stir the ricotta cheese with the eggs, grated cheese parsley, and seasonings (salt, pepper, and garlic).
  4. Filling Variations:
  5. Spinach Filling: add thawed spinach (drained and blotted dry with paper towels) to the ricotta mixture with 2 cups of shredded mozzarella.
  6. Meat Filling Additions: You will need around 2 to 3 cups of crushed meat of choice. Crushed cooked meat can be slices of pepperoni (1 package), loose-cooked sausage, a mixture of sausage and meatballs crushed together, or just crushed meatballs. Place a few tablespoons of crushed meat after you've spread the noodle with the ricotta then add the meat on top of the ricotta cheese mixture before rolling up.
  7. Note: For the pepperoni place around 6 slices on top of the ricotta mixture per noodle.
  8. For Assembling the Ricotta Filled Noodles:
  9. Spread the ricotta mixture evenly on the lasagna strips.
  10. Add any meat or spinach.
  11. Roll up each strip.
  12. Pour sauce on the bottom of the pan, place roll-ups seam-side-down in the sauce then the more sauce, and end with more sauce then shredded mozzarella.
  13. Cover loosely.
  14. Bake in a 350-degree oven for around 40 to 50 minutes until the cheese is melted and the sauce is bubbling.
