Steps for Making Easy Jam-Filled Sliced Logs
- cream the butter and sugar together
- add the egg and vanilla
- slowly blend in the flour and baking powder
- shape into logs
- fill and bake
- cool completely before slicing
The recipe only makes a small batch of 30 cookies so make a double batch!
Other Fillings and Cookie Ideas
- lemon, mint, rum, anise, almond, orange, maple, or another extract you like in place of vanilla
- fill the center with Nutella
- add toffee chips, mini chocolate chips, and coconut to the center
- jam and peanut butter
- peanut butter and chocolate chips

There are plenty of recipes out there for thumbprints I have tried but I always come back to mom's tried and true recipes I have had hers since the early 1960s.

Jam Filled Sliced Logs
A quick version and soft buttery cookie filled with jam in the center that is a super easy version of the popular Thumbprints but easier in a log form!

Ingredients
- 2/3 cup sugar
- 8 tablespoons of butter softened
- 2 teaspoons vanilla extract
- 2 eggs
- 1 3/4 cups flour
- 3 tablespoons of cornstarch
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 cup or more if needed any preserves, we prefer red raspberry, blackberry or strawberry
Instructions
- Preheat the oven to 375 degrees and line two baking sheets with parchment paper.
- In a large mixing bowl cream together the butter and sugar until light.
- Add in the egg then beat for 1 minute.
- Stir in the salt and vanilla.
- Add the flour, cornstarch, and baking powder by hand and just stir until blended evenly.
- Form two mounds on the parchment paper that resemble logs with a spatula.
- With heavily floured hands shape the sides to a uniform shape then down the center of each make an indent well with flour fingers.
- Fill each middle of the log with any flavor of jam preferred. (I usually overfill mine).
- Bake at 375 degrees until the edges are browned and the top is set and dull on top.
- These take around 18 to 20 minutes to bake.
- Cool completely.
- Sliced with a smooth sharp knife into biscotti-style logs.
- Sprinkle with powdered sugar or make a powdered sugar and water-thin icing to drizzle on top.
- Store in an airtight container.
- Cookies will freeze perfectly for up to 4 months in between layers of parchment paper.
