Mediterranean Stuffed Peppers

Our family is obsessed with stuffed vegetables from zucchini, to eggplant, mushrooms, and of course, these Mediterranean Stuffed Peppers!

Stuffing vegetables especially peppers are so versatile and these Mediterranean-style peppers are a favorite with kalamata olives and feta cheese.

We love using cooked rice and chicken in our recipe from a previous meal that repurposes leftovers perfectly.

You may like the traditional style Mom's Style Stuffed Peppers version which is the traditional classic with meat and rice.

Mediterranean Stuffed Peppers are completely adaptable, easy to make, and can be frozen and taken out when needed!

Mediterranean Stuffed Pepper Steps

  1. clean and remove the seeds from the peppers ( you can also slice them in lengthwise for less pepper to fill and stretch the recipe
  2. lay them into a greased casserole dish
  3. fill with cooked rice and ground lamb or beef stuffing mixture
  4. add the feta cheese
  5. add the sauce and mozzarella cheese, drizzle with sauce and olive oil
  6. bake at 400 degrees loaded with cheese until the pepper is soft

Shopping List to Make Our Mediterranean Stuffed Peppers

  • ground beef or ground lamb 
  • large bell peppers
  •  cooked rice 
  •  crumbled feta cheese
  •  shredded provolone or mozzarella cheese
  •  chopped Kalamata olives chopped 
  • fresh oregano 
  • salt and pepper to taste 
  • olive oil for drizzling 
  • Topping: fresh marinara sauce 
  • Optional: serve on a bed of fresh spinach leaves or sauteed spinach

Other Additions for Stuffing Peppers Suggestions:

  1. black olives
  2. beans of any kind but chickpeas are our favorite
  3. sliced mushrooms
  4. diced zucchini
  5. chopped eggplant
  6. white cannellini beans or other beans
  7. shredded julienne carrots
  8. diced celery
  9. peas
  10. chopped asparagus

Tips:


  • Use cooked rice any kind brown or white or even wild rice
  • Make sure the meat is not frozen, however, if you do use thi pat is dry after draining the grease
  • ground chicken or turkey can be substituted
  • wild rice is a good addition and substitute for white rice
  • You can substitute cooked Quinoa for rice or another grain you prefer
  • Any shredded cheese can be used if you prefer
  • For softer peppers microwave for around 3 minutes or steam them for 10 minutes
  • For crispier topping or pepper broil on medium heat for 2 minutes watching carefully
  • For colorful stuffed peppers use assorted bell peppers in yellow, red, and green

Mediterranean Stuffed Peppers

Mediterranean Stuffed Peppers are completely adaptable, easy to make, and can be frozen and taken out when needed!

Ingredients

  • 1 pound of ground beef or ground lamb
  • 4 large bell peppers
  • Stuffing:
  • 1 cup cooked rice
  • 2 teaspoons freshly minced garlic
  • 1/2 cup crumbled feta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup chopped Kalamata olives
  • 2 tablespoons chopped fresh oregano
  • salt and pepper to taste
  • Olive oil for drizzling
  • 2 cups of marinara sauce
  • Topping: fresh marinara sauce and more shredded provolone
  • Optional: serve on a bed of fresh spinach leaves or sauteed spinach

Instructions

  1. Preheat the oven to 375 degrees. Oil spray a casserole dish.
  2. Clean and hollow out the peppers being very careful not to cut through the bottom of the peppers.
  3. Saute the beef in a tablespoon of olive oil with the garlic.
  4. Cook the rice and drain to package instructions.
  5. Mix the beef, rice, and stuffing ingredients evenly in a medium-sized glass bowl.
  6. Stuff peppers with the stuffing mixture, top with the cheese, and drizzle the top with oil.
  7. Add some sauce on the bottom of the casserole dish.
  8. Place the stuffed peppers in the baking dish.
  9. Top with marinara sauce and more provolone shredded.
  10. Bake for 30 minutes or longer until the topping starts to brown.
  11. Note: if you prefer softer peppers steam them (or microwave for 3 minutes) for around 10 minutes before stuffing.
  12. For freezing them: place them on a parchment paper lined cooking sheet after you've stuffed them, freeze, and when solid add to a freezer container.
  13. Freeze for up to 6 months. Bake as directed.
