One of the first cakes I ever learned to make with Mom was this easy lemon lime soda cake mix cake.

This is a vintage recipe that has been around since my earliest memory in the 1970s and I was around 11 years old when we made this cake together.

Easy Step-by-Step Old Fashioned Lemon Pound Cake

  1. Preheat oven to 350 degrees. Grease a bundt pan.
  2. Add the cake mix with instant pudding and combine evenly.
  3. Stir in the eggs and zest if using
  4. Stir in the lemon-lime soda to the batter
  5. Pour the batter into the prepared bundt pan
  6. Bake at 350 degrees for around 55 minutes
  7. Use a toothpick to ensure the cake is completed baking in the thickest part

Tips for Old Fashioned Lemon Lime Soda Cake

  1. always preheat the oven
  2. ensure you heavily grease the bundt pan
  3. this cake can be served plain, with fresh fruits, a dusting of powdered sugar, or our glaze recipe
  4. change this to orange with orange zest or add other flavorings with orange soda
  5. add club soda and then chocolate chips to a vanilla pound cake using just vanilla beans and vanilla extract
  6. add toasted almonds or other chopped nuts you prefer
  7. other size pans can be used however you need to adjust baking times
  8. you can make this recipe in cupcake tins with paper liners
  9. cool them for at least 10 minutes before flipping
  10. use a cake tester or toothpick to ensure baking is completed in the center 
  11. store cake in the freezer for up to 6 months if not eating within 4 days

Vintage Lemon Lime Soda Cake

A vintage moist lemon cake made with, instant pudding, lemon-lime soda, and a cake mix from the 1970s.

Ingredients

  • 1 box yellow, lemon, or white cake mix (15.25 ounce box)
  • 1 small box of instant lemon pudding mix
  • 4 large eggs
  • 3/4 cup vegetable oil
  • 3/4 cup lemon-lime soda any brand
  • Glaze:
  • 1 cup powdered sugar
  • 1 tablespoon water or milk
  • 1 tablespoon freshly squeezed lemon juice
  • Optional: 1 tablespoon lemon freshly grated lemon zest

Instructions

  1. Preheat the oven to 325 degrees and heavily grease a bundt pan.
  2. Note: you can use another pan but the cooking time will vary. Use the toothpick method to check that the thickest part of the cake is done baking.
  3. Pour the cake mix and box of instant pudding mix into a large mixing bowl
  4. Beat in the eggs, then add the vegetable oil.
  5. Stir in the lemon-lime soda and stir to combine evenly.
  6. Pour the batter into the prepared greased bundt pan.
  7. Bake at 325 degrees for 40-45 minutes.
  8. Cool and invert onto a serving dish.
  9. Mix the glaze in a small bowl and pour over the top of the cake.
