Butterscotch Blondie Bars

A blast from the past 1960s recipe called butterscotch blondie bars full of that toffee flavor and brings back a ton of childhood memories after one bite.

Butterscotch chips, butter, and brown sugar blended with simple pantry ingredients will transform into a chewy wonderful dessert bar.

These need nothing else on them but sure can be incredible with a scoop of vanilla ice cream and a drizzle of butterscotch ice cream topping or caramel for an after-dinner treat.

These bars are super easy to make and never have any leftovers at least not in our home.

Butterscotch Blondie Bars Easy Step-By-Step Recipe

  • Preheat the oven to 350 degrees and grease a 9 x 9 pan with butter spray cooking oil
  • Mix the butter and sugar together, then add the egg
  • Stir in the dry ingredients
  • Fold in the chips
  • Place the batter in the pan, and bake  until the edges get browned around 25 minutes
  • cool completely before cutting

Tips for Butterscotch Blondies

  • always grease the pan you're using
  • for thicker bars use an 8 x 8 sized square pan
  • stack wax paper in between each bar when storing
  • place in a covered container

Butterscotch Blondie Bars Easy Recipe



These vintage butterscotch blondies are rich and sweet so cut the bars into small pieces.

If you would like a dessert when hosting a party, try adding one to a cocktail glass top with ice cream, and drizzle with caramel and toffee chips.

Butterscotch Blondie Bars

A vintage butterscotch bar with a buttery chewy toffee flavor that will bring a flood of childhood memories back in every bite.

Ingredients

  • 3/4 cup of melted butter cooled
  • 1 1/2 cups light or dark brown sugar
  • 2 eggs
  • 2 teaspoons of pure vanilla extract
  • 1 3/4 cups plus 2 tablespoons of AP flour
  • 1 teaspoon of baking powder
  • 1 teaspoon cornstarch
  • 1 teaspoon salt
  • 1 cup of butterscotch chips ( and more for the top before baking)

Instructions

  1. Preheat the oven to 350 degrees and grease (with butter-flavored cooking oil) a 9 x 9-inch square baking pan.
  2. Note: for thicker bars use an 8 x 8 greased pan.
  3. You will need two bowls:
  4. Place the brown sugar, cooled butter, and vanilla in the first bowl then whisk in the eggs until evenly blended.
  5. In the second bowl whisk the cornstarch, flour, baking powder, and salt until combined.
  6. Combine the two just until the flour mixture is combined then fold in the butterscotch chips.
  7. Pour into the greased baking pan.
  8. Sprinkle a few more chips on top.
  9. Bake until the edges are browned and the middle is set around 30 minutes.
  10. Cool completely cut into bars.
