- place the cornflakes in a zip lock bag then crush them with a rolling pin
- for fewer calories use whipped topping thawed

Mexican American Best Fried Ice Cream
Of course, this isn't deep-fried like the original version, but it's a mockup great tasting super easy dessert you can make in no time.
The cinnamon ice cream, honey-crunchy topping, is a festive refreshing dessert and a hit every time it's served!
All decked out with garnishes it is also one of the prettiest desserts for Cinco De Mayo parties.
Easy Fried Ice Cream Dessert

Easy Mexican American Fried ice cream. A mock version of this dessert not really fried but delicious and quick to make to celebrate Cinco De Mayo.
Ingredients
- 1/2 quart of vanilla bean ice cream or coffee ice cream softened around 25 minutes on the counter
- 1 cup ( 8 ounces will double when whipped) of heavy cream whipped with 2 tablespoons of sugar ( or use an 8 ounce tub of whipped topping)
- 1/2 teaspoon cinnamon
- 2 1/2 cups crushed cornflakes (place them in a plastic ziplock bag and roll the bag with a rolling pin)
- 4 tablespoons salted butter
- 3 tablespoons light brown sugar
- 1/4 cup sliced and toasted almonds
- 3 tablespoons of honey
- Garnish: maraschino cherries, more whipped cream
- Optional: warmed hot fudge sauce
Instructions
- In a frying pan melt the butter with sugar then add the cornflakes and saute to a light golden brown (around 4 minutes stirring constantly.
- Spread in a buttered 13 x 9 casserole dish half of the cornflake mixture.
- In a bowl, add softened ice cream, whipped cream, and cinnamon and gently mix.
- Add the ice cream to the cornflake layer, then add the remaining cornflakes on top.
- Drizzle the top with honey, decorate with maraschino cherries, and sprinkle with toasted almonds.
- Freeze-covered with plastic wrap overnight or for at least 5 hours.
- Slice with a metal spatula ( I usually dip mine in hot water it's easier to cut).
- Serve with hot fudge sauce warmed if desired and more whipped cream.
