Blackberry Sour Cream Muffins

Huge sweet juicy blackberries are in season and they make the most tender delicious moist crumb when it comes to baking muffins and truly a special treat.

Muffins are my go-to snack any time of the day, they are perfectly warmed for 11 seconds in the microwave and slathered with butter, clotted cream, or even jam.

The batter isn't overly sweet so if you have a sweet tooth, drizzle a little icing sugar or top with a dusting of powdered sugar.

As soon as ripe blackberries hit the farmer's market we start making all our favorite summer recipes with them to include homemade blackberry jam and blackberry pie two other berry favorites.

Plus when the berries are on sale we stock up on them and just place the berries in freezer bags to enjoy them all summer and into the fall season.

Step by Step for Making Blackberry Sour Cream Muffins

  1. cream the butter and sugar together
  2. place all the dry ingredients in a separate bowl and whisk together
  3. add the sour cream, other wet ingredients milk and blend in another bowl
  4. slowly combine the two, then fold in the fruit

Other Optional Fruit Substitutions for Blackberries

  1. red raspberries
  2. boysenberries
  3. diced strawberries
  4. diced peaches
  5. diced mango
  6. dried fruits chopped of any kind
  7. fresh cranberries
  8. diced apples

Tips for Making Blackberry Sour Cream Muffins

  1. do not overmix the batter just combine wet and dry ingredients just until mixed evenly
  2. for sweeter topping before baking the muffins, add a combination of cinnamon and sugar on top or just sugar
  3. substitute red raspberries, blueberries, or strawberries instead of blackberries
  4. make sure you use baking powder, not baking soda
  5. any flavored extracts go great with this recipe to substitute for the vanilla, try some lemon, almond, or orange extracts.
  6. If you happen to have leftover muffins the next day,  grill them served warm by following our instructions for grilled blueberry muffins.

Summer Berry Muffin Recipes



This is by far the best homemade blackberry muffin recipe I have made for decades and have tried many different toppings and flavorings, and they all come out delicious every time

With the addition of sour cream, they are just the perfect cake-like muffins and compliment any fruit you add to this basic recipe.


This recipe is super easy, quick, and really has basic ingredients, just remember as I said in the tips do not over-mix the batter for best results.


The muffins with sour cream added are for just the right sweetness and are perfect with any hot or cold beverage at any time of the day for a delicious treat.

Blackberry Sour Cream Muffins

Blackberry Sour Cream Muffins

A sour cream and blackberry muffin that isn't too sweet and the perfect Spring and Summer breakfast or snack muffin made from scratch.

Ingredients

  • 2 cups all-purpose flour
  • 2/3 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup sour cream
  • 1/2 cup butter, melted and cooled
  • 2 large eggs
  • 1 teaspoon whole milk
  • 1 teaspoon vanilla extract or lemon extract
  • 1 1/2 cups of fresh blackberries (blotted dry)
  • Garnish: powdered sugar or a mixture of powdered sugar and water to make a thin icing when muffins are cooled.

Instructions

  1. Preheat the oven to 375 degrees and grease a 12-cup muffin tin (or line with paper liners).
  2. Place the dry ingredients in a bowl and whisk together.
  3. Add to another clean bowl, cooled butter, eggs, milk, sour cream, and vanilla then whisk together.
  4. Blend the two mixtures just until moistened (the batter will be very thick).
  5. Fold in the berries.
  6. Fill each tin using an ice cream scoop or around 3 tablespoons per muffin cup.
  7. Bake for around 25 minutes at 375 degrees.
  8. Cool slightly before removing from the pan.
  9. After completely cooled dust with powdered sugar or a thin icing.
