Blackberry Cheesecake Bars
Ingredients
- Crust
- 1 package of cinnamon graham crackers crushed into crumbs
- 4 tablespoons melted butter
- Filling:
- 1 - 8 ounce package of cream cheese softened
- 1/2 cup sour cream
- 1/2 cup sugar
- 2 eggs
- 1 1/2 teaspoons vanilla
- 1 teaspoon grated fresh lemon zest
- Topping:
- 1 cup blackberries
- 1 tablespoon flour
- 2 tablespoons of sugar
- 1 teaspoon vanilla
Instructions
- Preheat the oven to 350 degrees. Grease a 9 x 9 pan or line with parchment paper.
- Place the cinnamon graham crackers into the food processor with softened butter and pulse until fine crumbs.
- Make the crust and pat down into the prepared pan.
- Beat all the filling ingredients until smooth and creamy around 4 minutes.
- Pour over the crust.
- Gently toss the berries into the vanilla then into the flour and sugar.
- Place the berries on the top of the filling.
- Bake at 350 until the middle is set around 45 minutes.
- Cool. Cut into squares.
