Baking Mix Peach Upside Down Cake is a buttery cake with a brown sugar glaze that bakes with peaches for a wonderful topping on your cake.

This buttery brown sugar glaze with peaches is very similar to the popular pineapple upside-down cake that has been around for over 30 years and peaches are a great alternative to pineapple.

The batter has simple ingredients served with plain or with whipped cream it's the perfect dessert for any weeknight and pretty enough to serve when hosting a dinner party.

Easy Steps for Making Peach Upside-Down Cake

  1. First, preheat the oven to 350 degrees and line or grease  9-inch pan (you can use any round or square baking pan)
  2. add the peaches, melted butter, and brown sugar to the bottom of the prepared pan
  3. mix until evenly blended
  4. pour the batter over the fruit mixture and bake for around 40 minutes

Tips

Baking Mix Peach Upside Down Cake

Peaches in a buttery brown sugar glaze similar to an upside-down cake. Serve plain or with whipped cream.

Ingredients

  • 2 tablespoon butter melted
  • 1/4 cup light brown sugar
  • 1 pound (16 ounces) of canned peaches diced and drained
  • 1 1/3 cups of baking mix (such as Bisquick, Jiffy, or another nonbrand name mix)
  • Note: refer to the notes for the homemade baking mix recipe below recipe can be doubled
  • 3/4 cup granulated sugar
  • 3/4 cup of milk
  • 3 tablespoons of butter at room temperature (must be very soft)
  • 1 egg
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon of vanilla extract

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a round 9 x 9 pan add the brown sugar, with the melted butter then mix evenly.
  3. Add the diced drained peaches to the top of the butter mixture in the pan.
  4. In a mixing bowl add the baking mix with egg, sugar, cinnamon, vanilla, and milk and beat for around 2 minutes.
  5. Pour over the fruit and bake at 350 degrees for around 40 minutes or until a toothpick comes out clean in the center.
  6. Cake can be inverted on a serving plate topped with whipped cream and maraschino cherries if desired or sliced and flipped over peach side up.

Homemade Baking Mix Basic Recipe

1 cup all-purpose flour 

1 - 1/2 teaspoons baking powder

1/4 teaspoon salt 

1 tablespoon butter softened

Directions:

Sift the flour and then place in a medium bowl.

Whisk in the baking powder and salt to evenly blend.

Using a pastry cutter or fork, mix in the butter until combined evenly to look like coarse crumbs. Now it’s ready to use

If you have leftovers store it in the freezer until ready to use if longer than 1 week.
