Chocolate chip cookies with coffee granules in the batter. The flavors for coffee lovers are a total yummy experience and this cookie is super delicious!
Ingredients
- 1 cup (2 sticks) butter, softened
- 3/4 cup brown sugar
- 3/4 cup granulated sugar
- 1 large egg
- 1 large egg yolk
- 2 teaspoons pure vanilla extract or coffee flavored extract or liqueur
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 3 tablespoons instant espresso coffee
- 1 cup chocolate chips (dark, milk, or another chip you prefer)
- pinch of salt
Instructions
- Preheat the oven to 350 degrees and grease two baking sheets or line with parchment paper.
- Add both sugars to a mixing bowl with the butter and cream for 3 minutes using an electric mixer.
- Add the eggs and vanilla.
- Whisk together (in a clean bowl) the baking soda flour and coffee granules.
- Fold this dry mixture into the creamed mixture then fold in the chocolate chips.
- Cover with plastic wrap and place this batter into the refrigerator for 1 hour ( or freeze the batter for 30 minutes on a cookie sheet then they'll be ready to pop in the oven).
- Note: chilling keeps the cookies from spreading
- Add the cookies onto the prepared baking sheet using a cookie scoop (or drop by tablespoons).
- Bake for 10 minutes or until the edges start to turn golden brown.
