Easy Slow Cooker Pulled Mojo Pork Recipe
- oil spray the liner of your slow cooker
- mix the marinade and add to a covered bowl overnight
- place in your slow cooker
- slow cooker on low for 8 hours or until the pork shreds easily

- pork shoulder or pork butt
- salt and pepper to taste evenly on top of the pork
- freshly squeezed orange juice
- freshly squeezed lime juice
- extra-virgin olive oil
- chopped parsley or cilantro
- thinly sliced garlic cloves

Slow Cooker Mojo Pork

Ingredients
- 1 ( around 4 to 5 pounds) pork shoulder or pork butt
- salt and pepper to taste evenly on top of the pork
- 3/4 cup freshly squeezed orange juice
- 1/2 cup freshly squeezed lime juice
- 1/2 cup extra-virgin olive oil
- 1/4 cup chopped flat-leaf parsley (or cilantro )
- 6 - thinly sliced garlic cloves
- 2 - tablespoons orange zest
- 1 - teaspoon lime zest
- 1 - freshly chopped basil (or use 2 dried bay leaves but remember to remove those after cooking)
- 2 teaspoons dried oregano
- 1 teaspoon ground cumin
Instructions
- Combine all the marinade ingredients and place the pork in a large covered bowl with the mixture. Marinate for at least 7 to 8 hours or overnight. (the longer the better for deep flavors)
- Oil spray (with cooking oil spray) a 6 to 7-quart slow cooker, add the pork and marinade mixture in the slow cooker.
- Set the slow cooker to low for 6 to 8 hours, and check with a fork to see if the pork shreds easily, if not continue cooking (this usually is done in 6 hours).
- Pork is cooked using an internal quick- instant read thermometer at 145 degrees (if it pulls apart easily with two forks it's done)
- Note: if you prefer crispy pork this can be placed in a broiler pan and broiled for a few minutes for a crispier outer pork.
