Red Velvet Doctored Cake Mix Cookies
Red Velvet soft cookies made with a doctored cake mix recipe

Ingredients
- 1/2 cup butter, room temperature (1 stick)
- 1 - 3/4 cups of AP flour
- 4 eggs
- 1 teaspoon vanilla extract
- 1 - box of red velvet cake mix (15.25 ounce size)
- Optional:1/2 cup mix-ins: chocolate chips (I use semi-sweet, milk, or white chips) 2/3 cup chopped walnuts or another kind you prefer (for nut allergies use pumpkin seeds or sunflower seeds) white cream cheese frosting or chocolate frosting homemade or canned
Instructions
- Preheat the oven to 350 degrees and line two baking sheets with parchment paper.
- Using an electric mixer beat the butter and eggs until blended.
- Beat in the vanilla to egg to that mixture.
- Add the cake mix and beat until smooth.
- Fold in any mix-ins.
- Tip: Chill the batter for easier rolling around 1 hour.
- Note: use powdered sugar for rolling instead of flour.
- Using a cookie scoop for uniform-sized cookies, drop them into powdered sugar onto the cookie sheet.
- Bake the cookies for around 10 to 12 minutes or until the edges start to brown.
- Cool before removing from the parchment paper.
- Dust with more powdered sugar leave, them plain or frost them with cream cheese icing.
- Cream Cheese Icing:
- 2 cups powdered sugar
- 1 8-ounce package of cream cheese softened
- 4 tablespoons marshmallow fluff
- Beat all together until smooth and the desired consistency is reached for spreading.
- Chocolate Frosting:
- 3 cups powdered sugar
- 1/4 cup dark unsweetened cocoa powder
- 4 tablespoons butter softened
- 2 tablespoons shortening
- 1/4 cup milk or more
- 1 teaspoon vanilla extract
- Pinch salt
- Beat all together until smooth and the desired consistency is reached for spreading.
