Homemade Corn Casserole
Made from scratch corn casserole with the combination of both regular and cream corn baked with a cornmeal creamy texture.

Ingredients
- In a mixing bowl add and whisk together:
- 2/3 cup all-purpose flour
- 1/2 cup yellow cornmeal
- 1/4 cup granulated sugar
- 1 tablespoon of baking powder
- 1/2 teaspoon granulated garlic powder
- 1 tablespoon chopped flat-leaf Italian parsley
- In another separate mixing bowl add these wet ingredients:
- 1 - 14 ounces of each can of creamed corn and the exact size of regular kernel canned corn with the liquids
- 2 eggs
- 1 stick of butter melted but not hot (1/2 cup)
- 1 cup sour cream
- 2 tablespoons olive oil
- Option: for heat add 1/4 teaspoon of red pepper flakes
- Optional: 1 cup shredded sharp cheddar (see notes at the end)
Instructions
- Preheat the oven to 330 degrees and grease a baking dish (around 8 cups in size)
- Whisk your dry ingredients together.
- Add all the wet ingredients to another bowl and whisk until combined.
- Blend the two bowl ingredients together evenly.
- Pour this combined mixture into the prepared greased baking pan.
- Bake in the preheated oven for around 55 minutes to an hour.
- Note: if you are a cheese lover add 1 cup of sharp cheddar on top 7 minutes before it's done baking.
