- oil spray a large skillet

Texas Beef Skillet
Texas Beef Skillet is a delicious one-pan meal with all the flavors of chili with the addition or rice and done in 20 minutes.

Ingredients
- 1 pound of ground chuck beef or ground turkey (also you can use boneless cubed chicken breast)
- 1 teaspoon onion powder
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1- 14.5 ounce can of diced tomatoes
- 1- 4 ounces can of mild green chilies
- 1 teaspoon of granulated garlic powder
- 1 15-ounce can of black beans or kidney beans
- 3/4 cup of instant rice
- water, around 3/4 cup
- 1 6-ounce can of tomato paste
- extra sharp cheddar cheese shredded/grated off a block
- crushed tortilla chips
- salt, and pepper to taste ( add cayenne pepper for a little heat if you prefer)
- Garnish Ideas: chopped parsley or cilantro, chopped avocado, green onion diced or diced fresh tomatoes and green bell peppers diced, crushed corn chips or tortilla chips
- Optional: you can substitute chili seasoning packets but omit salt and seasonings, chicken breast or ground turkey can be substituted cubed, and for vegetarians, add an extra large can of kidney or black beans
Instructions
- Add a light coating of cooking oil spray to a large skillet and heat it to medium heat.
- Brown the meat and drain the fat after the pink is gone.
- Stir in all the spices, (except for salt and pepper add that at the end) add the tomato paste, and stir to combine.
- Stir in the tomatoes with juice, undrained beans, uncooked rice, water, and green chilies.
- Note you may need more water if this gets too thick.
- Simmer for around 20 minutes covered on low heat.
- Check the rice to make sure it's soft and taste to season it with salt and pepper to your liking.
- Note: for more heat add a pinch of cayenne pepper.
- Top with shredded/grated extra sharp cheddar cheese and cover the pan again until it melts.
- Serve with crushed tortilla chips.
- Garnish with suggestions in the notes if desired.
