5 Pancake Mix Recipes

One of my favorite breakfast recipes is this easy all-in-one pan skillet casserole that makes a quick brunch and is perfect for a weekend meal when you set up a serving bar for those pickiest of eaters.

Although pancake mixes can be used to replace many baking recipes, a regular baking mix is a different being than just adding water pancake mixes however you can still use them.

You may also like to try our homemade pancake batter when you have time, it's fantastic!.

Peanut butter cookies come together quickly and taste great similar to the old-fashioned cookie jar style.

Then there is a wonderful batter for vegetables and seafood to try plus for dessert a coffee cake with a streusel topping.

Recipes Using Just Add Water Pancake Mix

  • each recipe has easy directions however you will want to have a few tips along the way read below for a complete pancake mix just add water or any brand

Tips for our recipes using Just Add Water Pancake Mix


  • any brand of just add the water pancake mix you prefer no name brands are fine
  • adding an egg makes the batter richer and milk instead of water
  • another liquid to substitute when  making fish and vegetables to use is carbonated soda or beer for a lighter batter
  • just add water pancake mix works terrific for making a thin crepe batter
  • muffins can be made with this by adding more sugar and eliminating the leavening agents then adding fruits of choice
  • experiment with spices like pumpkin spice, nutmeg, ginger, and even extracts in the batter
  • make the scrambled eggs ahead of time and for cheese, fans add some extra shredded cheese to those 
  • when making the breakfast casserole set up a breakfast bar to top the baked pancakes instead of dividing this as our recipe calls for and add all cooked meats, cooked vegetables IE potatoes, spinach, asparagus, etc.,  chop up some fruits,   add a bowl of whipped cream, chopped nuts, syrups, and whatever you love on your serving stations

5 Pancake Mix Recipes

Here are 5 awesome recipes using Just Add Water Pancake Mix. a great batter for seafood and vegetables, Coffee Cake, Peanut Butter Cookies, Funnel Cake Bites, and a Breakfast Casserole

Ingredients

  • Batter Fried Seafood and Vegetables:
  • 1 cup of just add water pancake mix
  • 3/4 cup of water or you can use a flat stout beer
  • seasoning: 1 teaspoon of each: granulated garlic powder, Italian dried herbs, cajun seasoning mix, paprika, and optional (cayenne pepper for heat add just a pinch!)
  • Pancake Breakfast Casserole Recipe:
  • 1 cup water
  • 2 tablespoon butter, melted
  • 6 eggs, cooked
  • 2 cups shredded provolone, cheddar, Swiss or whatever cheese you prefer
  • 12 slices of crispy cooked bacon
  • see options under notes for adding to the top
  • Optional: maple syrup
  • Peanut Butter Cookies:
  • 1/2 cup unsalted butter at room temperature
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 cup peanut butter
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups pancake mix
  • optional: 1/4 teaspoon of cinnamon
  • Coffee Cake:
  • 2 1/2 cups pancake mix
  • 1/4 cup sugar
  • 1/2 cup buttermilk (just add 1 teaspoon of lemon juice to regular milk)
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • Topping for Coffee Cake:
  • 2 tablespoons butter softened
  • 1/4 cup pancake mix
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • Optional Garnish: a dusting of powdered sugar
  • Funnel Cake Bites:
  • 1 1/2 cups of just add water pancake mix
  • 3/4 cup water or 2 % milk
  • 2 tablespoons sugar
  • 2 teaspoons vanilla, lemon, or orange extract
  • powdered sugar for garnishing or warmed hot fudge or caramel sauce for dipping them in

Instructions

  1. Battered Seafood and Vegetables Instructions:
  2. Heat around 2 inches of oil in a deep frying pan.
  3. Mix the batter until smooth adding the seasoning and using either water or flat beer.
  4. Dip the vegetables or seafood you using a fork and shake off excess.
  5. Drop into hot oil and fry until golden usually 3 to 5 minutes for fish.
  6. Note: Vegetables take a little longer unless they are precooked depending on what you use.
  7. Pancake Breakfast Casserole Instructions:
  8. Mix the pancake with water until smooth.
  9. Add the melted butter to a cast iron 10-inch skillet
  10. Pour the batter into it.
  11. Bake this at 400 degrees for around 9 to 10 minutes or until the edges are brown.
  12. While this is baking make the scrambled eggs, bacon, and whatever toppings you will add to this casserole that your family prefers.
  13. Take out the pancake and top with a layer of cheese around 1 cup.
  14. Add the toppings next (I usually separate them with cooked potatoes, spinach, and tomatoes
  15. Add the scrambled eggs next and top with more cheese and meats you may prefer other than bacon.
  16. Bake again at 400 just until the cheese melts.
  17. Serve this with maple syrup if you prefer (refer to the notes for topping suggestions
  18. Peanut Butter Cookie Instructions:
  19. Preheat the oven to 375 degrees and line a cookie sheet with parchment paper.
  20. Mix all the ingredients (with added cinnamon if using) until it forms a ball.
  21. Roll into balls and place on the baking sheet.
  22. Using a fork make a crisis cross with the fork tines and flatten each cookie and sprinkle with granulated sugar on top.
  23. Bake at 350 degrees for 8 to 10 minutes.
  24. Coffee Cake Instructions:
  25. Preheat the oven to 350 degrees and grease and 9 x 9 baking pan.
  26. Add the dry ingredients to a bowl, whisk together.
  27. Slowly add all the wet ingredients just until evenly combined.
  28. Pour into the prepared pan.
  29. Top with the mixture of streusel topping.
  30. Bake for 25 minutes and cool completely before cutting.
  31. Funnel Cake Bites:
  32. Heat the oil to 375 degrees
  33. While the oil is heating mix the batter until evenly blended.
  34. Drop by teaspoons into the hot oil and fry until golden turning on each side to fry evenly.
  35. Place on paper towels as they are completed cooking to drain oil
  36. Dust with powdered sugar, and cinnamon sugar, or serve with heated hot fudge or caramel for dipping.
