One of my favorite breakfast recipes is this easy all-in-one pan skillet casserole that makes a quick brunch and is perfect for a weekend meal when you set up a serving bar for those pickiest of eaters.
Although pancake mixes can be used to replace many baking recipes, a regular baking mix is a different being than just adding water pancake mixes however you can still use them.

Ingredients
- Batter Fried Seafood and Vegetables:
- 1 cup of just add water pancake mix
- 3/4 cup of water or you can use a flat stout beer
- seasoning: 1 teaspoon of each: granulated garlic powder, Italian dried herbs, cajun seasoning mix, paprika, and optional (cayenne pepper for heat add just a pinch!)
- Pancake Breakfast Casserole Recipe:
- 1 cup water
- 2 tablespoon butter, melted
- 6 eggs, cooked
- 2 cups shredded provolone, cheddar, Swiss or whatever cheese you prefer
- 12 slices of crispy cooked bacon
- see options under notes for adding to the top
- Optional: maple syrup
- Peanut Butter Cookies:
- 1/2 cup unsalted butter at room temperature
- 1 cup granulated sugar
- 1 cup brown sugar
- 1 cup peanut butter
- 2 eggs
- 1 teaspoon vanilla extract
- 2 1/2 cups pancake mix
- optional: 1/4 teaspoon of cinnamon
- Coffee Cake:
- 2 1/2 cups pancake mix
- 1/4 cup sugar
- 1/2 cup buttermilk (just add 1 teaspoon of lemon juice to regular milk)
- 1/2 cup sour cream
- 1 teaspoon vanilla extract
- Topping for Coffee Cake:
- 2 tablespoons butter softened
- 1/4 cup pancake mix
- 1/4 cup brown sugar
- 1 teaspoon ground cinnamon
- Optional Garnish: a dusting of powdered sugar
- Funnel Cake Bites:
- 1 1/2 cups of just add water pancake mix
- 3/4 cup water or 2 % milk
- 2 tablespoons sugar
- 2 teaspoons vanilla, lemon, or orange extract
- powdered sugar for garnishing or warmed hot fudge or caramel sauce for dipping them in
Instructions
- Battered Seafood and Vegetables Instructions:
- Heat around 2 inches of oil in a deep frying pan.
- Mix the batter until smooth adding the seasoning and using either water or flat beer.
- Dip the vegetables or seafood you using a fork and shake off excess.
- Drop into hot oil and fry until golden usually 3 to 5 minutes for fish.
- Note: Vegetables take a little longer unless they are precooked depending on what you use.
- Pancake Breakfast Casserole Instructions:
- Mix the pancake with water until smooth.
- Add the melted butter to a cast iron 10-inch skillet
- Pour the batter into it.
- Bake this at 400 degrees for around 9 to 10 minutes or until the edges are brown.
- While this is baking make the scrambled eggs, bacon, and whatever toppings you will add to this casserole that your family prefers.
- Take out the pancake and top with a layer of cheese around 1 cup.
- Add the toppings next (I usually separate them with cooked potatoes, spinach, and tomatoes
- Add the scrambled eggs next and top with more cheese and meats you may prefer other than bacon.
- Bake again at 400 just until the cheese melts.
- Serve this with maple syrup if you prefer (refer to the notes for topping suggestions
- Peanut Butter Cookie Instructions:
- Preheat the oven to 375 degrees and line a cookie sheet with parchment paper.
- Mix all the ingredients (with added cinnamon if using) until it forms a ball.
- Roll into balls and place on the baking sheet.
- Using a fork make a crisis cross with the fork tines and flatten each cookie and sprinkle with granulated sugar on top.
- Bake at 350 degrees for 8 to 10 minutes.
- Coffee Cake Instructions:
- Preheat the oven to 350 degrees and grease and 9 x 9 baking pan.
- Add the dry ingredients to a bowl, whisk together.
- Slowly add all the wet ingredients just until evenly combined.
- Pour into the prepared pan.
- Top with the mixture of streusel topping.
- Bake for 25 minutes and cool completely before cutting.
- Funnel Cake Bites:
- Heat the oil to 375 degrees
- While the oil is heating mix the batter until evenly blended.
- Drop by teaspoons into the hot oil and fry until golden turning on each side to fry evenly.
- Place on paper towels as they are completed cooking to drain oil
- Dust with powdered sugar, and cinnamon sugar, or serve with heated hot fudge or caramel for dipping.
