If you're pressed for time with a busy lifestyle, this Yellow Cake Mix Variety Cookie will be perfect for on-the-go folks who need large quantities of cookies for a bake sale, cookie exchange, or holiday gift giving.

Just one doctored cake mix will be transformed using one cookie dough divided to easily make a variety of different flavors.

Our three combinations are Lemon and White chocolate, Chocolate Chip with Coconut, and Maraschino Cherry with Almond.

The cookies looked so pretty frosted with white or chocolate icing or sprinkled with a dusting of powdered sugar.

These cake mix cookies stay nice and moist and are very light in texture, and with a few mix-ins like chocolate chips, nuts, sprinkles, or dried fruits, you can create all different kinds with our tips and suggestions below.

This easy-to-make cookie recipe can also be made with also flavors, and brands you prefer of cake mixes, however, to get a vast variety we usually choose a yellow or a white mix to start off with.

Step By Step Doctored Cake Mix Cookies

  1. preheat the oven and prepare your baking sheets with parchment paper or Silpat mats
  2. add the additional ingredients to a bowl with the cake mix
  3. divide into 3 even pieces
  4. mix in the flavorings and knead in the mix-ins you're using
  5. bake, cool, and frost

Other Mix-In Suggestions:

  1. peanut butter chips
  2. mint chocolate chips
  3. toffee chips, butterscotch chips, lemon chips, milk or white chocolate chips
  4. substitute sunflower seeds, chopped pretzels or cereal for nuts
  5. dried fruits like cranberries
  6. for Christmas, colors add chopped maraschino cherries and white chocolate chips
  7. white, milk, and dark chocolate chunks
  8. chopped peanut butter cups or another chopped candy you prefer
  9. mint-filled chocolate candies chopped
  10. chopped unwrapped caramels, pistachios, pecans, macadamia nuts, coconut
  11. pumpkin seeds for nut allergies
  12. cookies cant be left plain, rolled in cinnamon sugar, powdered sugar, or frosted
  13. add coconut and chocolate chips
  14. For Chocolate Cake Mix Combinations:
  15. coconut, chocolate chips, maraschino cherries, and almond or vanilla extract
  16. 1 teaspoon anisette extract, dark chocolate chips, and anisette chocolate frosting
  17. chocolate teaspoon of cinnamon, chocolate chips, a dash of allspice, drizzle with chocolate icing, and top with pistachios

Ingredients You Will Need (scroll down for exact measurements)

  • yellow cake mix or another flavor
  • eggs
  • butter
  • flour
  • vanilla or almond extract 
  • canned frosting in chocolate and or vanilla
  • Optional:
  • regular, mini, or assorted flavored chocolate chips, 
  • coconut, any kind of nuts, and colorful sprinkles to match the holiday theme
  • extracts: lemon, orange, almond, anise, maple, coconut, vanilla, mint

Garnish and Topping Suggestions

  1. before baking add a few chocolate chips on top of each cookie
  2. add coconut to each cookie before baking
  3. always decorate the top to identify the cookie with whatever is in the batter before baking
  4. for lemon cookies grate some fresh lemon zest on top or use the orange zest or orange extract cookies
  5. mini marshmallow mini chocolate chips and nuts can be rocky road cookies
  6. cinnamon sugar can be sprinkled on top
  7. drizzle white chocolate after cooling or dark chocolate
  8. use candied sprinkles to match the holiday theme
  9. add dried fruits, and nuts for fruit cake cookies

Tips

  • roll the cookies into balls by hand with very little flour or use a cookie scoop
  • store these in airtight containers
  • use any combination of 1 teaspoon extract with 1/2 cup or assorted nuts and any kinds of dried fruits or chocolate chips
  • tint the dough with food coloring
  • cool completely before frosting
  • cookies should be fragrant with spice you can add more
  • use a lined cookie sheet or Silpat mat
  • cookies can be rolled in granulated sugar before baking instead of frosted or after baking rolled in powdered sugar
  • add some cinnamon in the frosting for more spice flavor
  • when using another flavored cake mix you can add raisins, nuts, chopped candy bars, craisins, coconut, funfetti sprinkles to the batter and get creative
  • these cookies freeze in an airtight container unfrosted for up to 3 months thaw and frost
  • make a well in the center of the cookie then fill it with peanut butter, chocolate chips, or your favorite jelly

Cake Mix and Extract Suggestions


Of course, you can use a spice cake mix, yellow, red velvet the list goes on, and then just add the additional ingredients listed in the recipe card.


The only ingredients you will need to adapt are the mix-ins for nuts, chocolate chips, and whatever you like to balance out the flavors of the cake mix you decided to use instead of yellow flavored.


These cookies are terrific soft and light not dense and so simple to make and perfect when you need large quantities for a cookie exchange or even a bake sale for fundraisers.

Yellow Cake Mix Variety Cookies

Cake Mix Variety Cookies

These cake mix cookies make a variety easily and are perfect for any cookie fundraiser, cookie exchange or when you need a large quantity fast

Ingredients

  • 1 package of Yellow Cake Mix (15.25-ounce box) or any flavor/ brand you prefer
  • 1 -3/4 cups of flour
  • 4 eggs
  • 1 teaspoon vanilla
  • 1 stick of butter melted (1/2 cup)
  • Optional: extracts: lemon, almond, anise, maple, coconut, vanilla
  • 1/2 cup mix-ins IE chocolate chips (I use semi-sweet, milk, or white chips)
  • Optional 2/3 cup chopped walnuts or another kind you prefer
  • (for nut allergies use pumpkin seeds or sunflower seeds)
  • white and chocolate frosting canned or homemade

Instructions

  1. Preheat the oven to 350 degrees and prepare a baking sheet with parchment paper.
  2. Place the cake mix in a bowl.
  3. Add the eggs, melted butter, flour, and vanilla, and mix them all together just until blended.
  4. Divide the dough into 3 sections.
  5. Add 1 teaspoon of any flavoring, or food coloring (if you wish and mix-ins IE chocolate chips nuts, etc. knead them in after the flavoring.
  6. Roll into balls with flour hands.
  7. Place on a lined cookie sheet with parchment paper or a Silpat mat.
  8. Bake at 350 degrees for around 10 to 12 minutes or until the middle is dry and the bottoms begin to brown.
  9. Remove from the baking sheet to a wire rack and cool completely.
  10. Frost with homemade or canned frosting either vanilla, chocolate, or both.
  11. Note: you can also drizzle with a ganache or just roll in powdered sugar, or sifted cocoa powder. or cinnamon sugar depending on the flavors you pick out
  12. Sprinkle with coordinating colorful candies to match the holiday theme if using frosting.
  13. Let dry on wax paper.
  14. Store in a tight container.
  15. These will freeze unfrosted up to 3 months.
  16. Featured Cookies: ( using 1/2 cup chips, 1 -teaspoon extract, mixing together with floured hands)
  17. Lemon and White Chocolate Chips with lemon extract grated fresh lemon zest on top
  18. Milk Chocolate Chips and Coconut with coconut extract
  19. Chopped, Maraschino Cherries and almond extract
  20. Candy Canes: Mint extract is added to the red food coloring to tint the red dough, and the yellow dough stays vanilla. Divide the dough into two equal parts and add around 1/4 to 1/2 more flour add more to make a stiff dough if needed(to each split in half dough)  roll yellow dough into ropes and red into ropes taking two pieces twist together for candy canes then curve the top over to shape it. You can sprinkle sanding red sugar on them before baking.
