Parmesan Mashed Potato Souffle

Parmesan Mashed Potato Souffle is a baked creamy puffy Parmesan cheese-topped potato easy to make with leftovers and very impressive for hosting a dinner party.

Our simple recipe is great for weeknight meals since we usually repurpose leftover mashed potatoes and in a pinch, you can use instant potatoes in this recipe.

This potato side dish is made with eggs, heavy cream, garlic, and breadcrumbs in these creamy spuds.

There are several other toppings to add to this basic recipe for the souffle on top we give you options below.

The toppings can actually turn this dish into a souffle casserole so repurpose those leftovers everyone will love this dish.

Our taters are the perfect holiday side dish, easy any weeknight and they a potato that will compliment anything they're served with that you're cooking up.

If you're a cheese lover you can even melt some of your favorite cheddar, provolone (or whatever you fancy) on top before serving the souffle.

These ingredients and flavors in this recipe can be adapted if you're not a fan of garlic add some minced onions or chopped mint leaves, torn fresh basil or parsley leaves, sprigs of fresh rosemary (or another kind of herb you prefer) or just leave them plain that's fine also.

Easy Step by Step on how to make our Parmesan Mashed Potato Souffle

  1. Preheat the oven to 375 degrees
  2. Oil spray a baking souffle dish or small individual ramekins around 2 inches deep.
  3. Coat the bottom of the souffle dish with bread crumbs and granulated garlic powder on top of the greased prepared dish and set aside.
  4. Whisk the potatoes and egg yolks together with the cream. 
  5. Add the cheese and fresh minced garlic, and parsley and stir together until creamy. 
  6. In another clean bowl, add the egg whites with salt and whip with an electric beater until the whites have stiff peaks.
  7. Fold the egg whites into the potato mixture
  8. Pour on top of the prepared pan with bread crumbs.
  9. Sprinkle with more Parmesan cheese.
  10. Bake in a 375-degree oven until it puffs up and begins to brown around 35 to 40 minutes.

Tips and Topping Suggestions


  1. Yukon gold, Russet, or white potatoes
  2. make the potatoes cold or room temperature before adding eggs so they don't cook!
  3. Shredded cheese of any kind you prefer and melts easily
  4. Cooked crumbled bacon and shredded sharp cheddar cheese, sour cream, chives chopped
  5. Fresh chopped dill, freshly chopped parsley, and basil, with the parmesan cheese 
  6. Shredded Swiss, provolone, mozzarella, and parmesan with chopped cooked ham
  7. Cooked sliced Italian sausage, roasted peppers, escarole, and Parmesan cheese, sprinkle with mozzarella or a shredded combination of Italian cheese
  8. Leftover meats cubed chicken.
  9. For crispier topping broil for 2 minutes on high
  10. In a pinch used instant potatoes
  11. Make sure the whites are very stiff adding a pinch of salt

Easy Cooking Methods for MASHED Potatoes

  1. Boiled: cut the potatoes into small cubes for around 25 to 30 minutes
  2. Use leftovers from another weeknight meal
  3. Microwaved: place the cubed potatoes in a microwave-proof boil until soft
  4. In a hurry? You can make a mock-up version by using instant potatoes with some added herbs and spice suggestions or  just to package instructions

This souffle is a baked side dish baked with egg whites, garlic, potatoes, and herbs and is super impressive for holidays and entertaining. It.

Ingredients

  • regular butter or oil spray for the baking dish (2-inch souffle dish that will accommodate 2 cups of mashed potatoes)
  • 6 tablespoons Italian-flavored bread crumbs
  • 2 cups cold mashed potatoes(or room temperature) leftovers or fresh with or without skins it's your preference
  • Note: even instant works fine in a pinch to package instructions
  • 1 teaspoon granulated garlic powder
  • 1 tablespoon chopped flat-leaf parsley
  • 4 large eggs, separated
  • 6 tablespoons heavy cream
  • 6 tablespoons grated Parmesano Reggiano cheese and more for the top
  • 1 teaspoon minced garlic
  • salt and freshly ground pepper
  • Optional: shredded provolone or Swiss cheese as a garnish while serving
