Ideas and Tips for Using Rotisserie Chicken

  1. roast a whole chicken or buy one cooked and take all the meat off the bone
  2. pick a recipe your family likes from our list or a family recipe you like
  3. remove from the bone, and set the chicken aside for other recipes. Place the carcass in cheesecloth tied and boil to make broth
  4. adjust cooking times since the chicken is already cooked
  5. buy two or three cooked chickens at a time, remove from the bone add to small freezer bags for quick recipes store for up to 3 months
  6. a whole chicken can be air-fried,  and oven roasted 
  7. add this rotisserie chicken to your favorite soup recipe, sandwiches, or chili, used for toppings or stuffing
  8. use canned or bottled gravy with boneless chicken over rice or mashed potatoes
  9. add the boneless chicken to a can of tomato rice soup
  10. diced the chicken and add lemon juice, olive oil chopped olives, with diced roasted peppers it makes a great sandwich

  • cooked rotisserie or roasted chicken removed from the bone
  • sour cream and mayonnaise
  • lemon juice
  • salad greens
  • apples
  • walnuts
  • raisins, craisins, or grapes
  • salt, and pepper to taste

    Recipes Repurposing Leftover Roasted or Rotisserie Chicken

    Making Chicken at Home (rotisserie or roasted):

    • Instant Pot: this method uses any chicken parts, first use sear for both sides of the bird, add the garlic, and spices, and top the rub mixture and lemon slices. Pour in 1 cup of any kind of liquid preferably apple juice. Place on pressure cooker mode for 35 minutes and check the internal temperature to be at 165 degrees in the thickest part of your chicken.  
    • Stovetop: Place the bird in a dutch oven sprayed generously with cooking spray, proceed the same cook on medium heat for around an hour and 30 minutes or longer, again checking the internal temperature is 165 degrees.
    • Air Fryer: If you have a toaster oven-style or basket air fryer, this can be done on a broiler pan placing an air fryer on 360 preheated air fryer for 65 minutes, again checking the internal temperature is 165 degrees.
    • Rotisserie  Chicken using a grill: grill the bird for 1 hour and 15 minutes (18 minutes per pound) or until cooked through. Allow resting for 10 minutes before carving.

    Roasted or Rotisserie Chicken Tips

    • be sure to use a deep wider pan bigger than the chicken if roasting at home
    • Turkey can be used instead of chicken in these recipes
    • remove the chicken off the bone when cooled and place it in freezer bags for future meals
    • the chicken off the bone can be shredded in a food processor with barbecue sauce for sandwiches
    • if you're roasting your own chicken move the leg back and forth and it's ready to fall apart it's done
    • boil the bones for making broth in cheesecloth
    • this chicken off the bone can be used in stir fry, sandwiches, added to sauce IE: alfredo, and served over pasta, or make chicken chili with leftovers

    25 Ways to Repurpose Rottisserie Chicken

    This is a favorite chicken salad called Waldorf Salad. It has raisins, nuts, and apples in it and leftover rotisserie chicken!
    Prep time: 10 MinInactive time: 10 HourTotal time: 10 H & 10 M

    Ingredients

    • 2 cups leftover rotisserie or roasted cooked chicken breast meat (or dark whichever you prefer) cubed, shredded, or diced
    • 1 peeled and cored apple diced fine ( I leave some of the peel on for color)
    • 1 stalk of celery diced fine
    • 3/4 cup craisins or raisins (or use grapes)
    • 3/4 cup toasted pecans or walnuts (use pumpkin seeds or sunflower for allergies)
    • 3/4 cup of mayonnaise
    • 3/4 cup of sour cream
    • 1 or 2 tablespoons of lemon juice
    • salt, and pepper to taste
    • Optional: Add a little cayenne pepper if you would like heat

    Instructions

    1. Prepare all the vegetables and fruit in a bowl and add the lemon juice to coat.
    2. (this is to prevent apples from browning,)
    3. Add the chicken and all the rest of the ingredients.
    4. Blend together evenly.
    5. Serve on a bed of lettuce leaves.
    6. Refrigerate leftovers.
    7. Note: in a pinch, you can use bottled Peppercorn Salad dressing instead of mayo and sour cream
