A mini breakfast pizza with scrambled eggs and assorted toppings for a quick on-the-go to start your day!
Ingredients
- Bread to use:
- English muffins, naan, pita, (a slice of white or Italian, rye, sourdough toasted is recommended for these breads), bagels, tortilla wraps, pre-baked refrigerated biscuits
- 1 egg per person plus 1 teaspoon of water whisked together
- salt, and pepper to taste
- butter or cooking oil spray for cooking the eggs
- Note: basically you are creating a pizza with any bread open-faced or sandwiched together. With wraps, they would be a rollup. Choose any of our fillings, toppings, and sauces, and create your own with the ingredients you prefer on your eggs.
- Optional 1 tablespoon per egg: assorted cheeses, diced deli meats, diced vegetables, diced pepperoni, cooked breakfast sausage chopped, and crispy bacon all can be added to the eggs

Instructions
- A few preps: keep the meat warm unless you're adding it to the eggs. White bread and softer bread hold up better with sauce if you toast it first Have all the toppings you're using diced ahead to save time.
- In a non-stick frying pan, melt the butter or use cooking spray into the pan and heat to medium heat.
- Beat the eggs in a bowl using a whisk until combined evenly.
- Pour into the hot pan and keep stirring the eggs to get them fluffy.
- Either toast the bread you decided to use or leave it plain.
- This can be done in the same pan with the eggs as shown in the photo with the English muffins, bagels, or any bread you decided to use.
- Build your pizza starting with the scrambled egg, add meats (unless you added to the eggs), pepperoni, marinara sauce, or another you prefer, and the cheese preferred on top last
- Bake at 400 degrees until the cheese melts or you can skip that step and just eat it as it is or microwave for 10 seconds or until the cheese melts.
- Broil the top for crispier dark cheese.if desired.
