Our pie is made with mascarpone cheese, instant pudding and can be made with either a vanilla or chocolate instant pudding and any kind of crust homemade or store-bought.
I am a big fan of coconut cream pie and made both styles today, with chocolate almond joy instant pudding and vanilla and adding coconut to the filling.
My favorite is vanilla with chocolate with a regular graham cracker or Oreo crust either one is delicious or you can even bake a regular refrigerator dough pie crust which is also super yummy.
This pie is mixed in with a fluffy whipped topping to give you the creamiest slice of Almond Joy heaven.
Toasting the almonds and coconut quickly in the microwave gives this pie all the characteristics and delicious flavors of the famous candy bar then drizzle with a delicious hot fudge sauce.
This is one of those pies everyone thinks it's gourmet because it's so rich and decadent but oh so easy peasy.

Filling and Crust Tips
It's really a preference what instant pudding you prefer.
There are several you can choose to experiment with coconut, vanilla, almond joy, mounds bar, all are instant pudding flavors found on the shelves in a local supermarket.
Since I have tried them all, I prefer vanilla and adding regular coconut and make the topping more of the almond joy flavor.
The crust can be chocolate, graham cracker crust, pretzel crust, or just a store-bought refrigerated pie crust, the adaptions are to what your family likes.
Mascarpone cheese is light and creamy which I really love but in a pinch, use whipped cream cheese, which will taste great as well.

- mascarpone cheese or whipped cream cheese
- milk
- coconut
- toasted almonds

Decadent No-Bake Almond Joy Pie
If you love the taste of toasted almond and toasted coconut you're going to love this no-bake easy pie.
It's not too filling and a wonderful capture of that famous Almond Joy Candy bar everyone loves.
A perfect dessert for any coconut lover for sure and if you really want to get a little more indulgent try our Kahlua Hot Fudge on top (for adults only), it's truly decadent.

No Bake Almond Joy Pie
Ingredients
- 1 package of instant pudding any kind vanilla, coconut cream, chocolate, almond joy, mounds (we use coconut cream or vanilla and you can also use sugar-free products)
- 1 1/2 cups milk
- 1 premade crust (graham cracker, oreo cookie crust, pretzel crust, or store-bought refrigerated pie crust baked
- 1/2 cup of mascarpone cheese at room temperature or use whipped cream cheese
- 1 - 8 ounce tub of thawed whipped topping
- 1/2 cup sweetened coconut flakes
- Topping Garnish:
- 1/4 cup toasted coconut
- 1/4 cup toasted almonds
- 1/2 cup hot fudge sauce warmed
- Optional: add 1 teaspoon of coconut extract to a vanilla or chocolate instant pudding, add a more whipped topping for a garnish, sifted cocoa powder, shaved chocolate, mini chocolate chips, colorful sprinkles, more warmed hot fudge, use the actual candy almond joy crushed on topping or when serving
Instructions
- Beat the cheese, milk, and instant pudding of choice together until thickened.
- Fold in the whipped cream topping and coconut.
- Pour into the crust of choice.
- Toast the almonds in the oven or microwave in 1-minute increments until toasted and brown.
- Do the same with coconut, add to a paper plate, toast in the microwave in 1 minutes increments watching carefully until browned.
- Sprinkle toasted almonds and toasted coconut on top.
- Drizzle with hot fudge sauce as much as you want.
- Refrigerate for at least 30 minutes
- Keep leftovers refrigerated.
- Serve with optional additional toppings: whipped topping, sifted cocoa powder, shaved chocolate, mini chocolate chips, colorful sprinkles, more warmed hot fudge
