Strawberry Ricotta Bruschetta

Strawberry Ricotta Bruschetta is one of the summer's finest appetizers for brunch, lunch, or dinner not to mention a creamy light snack!

Freshly sliced strawberries on top of olive oil-infused toast spread with ricotta, and chopped basil drizzled with a good grade of balsamic vinegar or glaze, these flavors are delightful.

This appetizer is perfect since you can change the toppings and get so creative with them.


Use fresh fruit of any kind, strawberries are a favorite here but you can use any kind of fruits see below for suggestions.


I prefer an 18 year aged balsamic vinegar or a homemade reduction made into a glaze (recipe is below).


These are perfect for entertaining guests or bringing to any dinner party in a pinch, really easy and quite impressive, and a showstopper on your table!

  • stick bread of choice cut
  • ricotta whole milk cheese
  • fresh basil
  • extra virgin olive oil
  • optional fresh garlic cloves

I like to make my own Easy No-Knead French or Italian Stick Bread in stick form homemade.


We also love Artisan bread, French bread of any kind, just rustic bread is perfect for this appetizer!


Slice then toast it (cut thick in 2-inch slices), toast, and top with fruits and cheese, it's so delicious!

Strawberry Ricotta Bruschetta

Strawberry Ricotta Bruschetta

If you're looking to serve a fun brunch during strawberry season, this bruschetta spread with ricotta topped with berries and a drizzle with balsamic is divine!

Ingredients

  • 1
  • baguette, cut into 2-inch slices ( I use French or Artisan Breads)
  • 1/4 cup extra virgin olive oil (plus a few more teaspoons for ricotta mixture)
  • 1 1/2 cups of whole milk ricotta cheese
  • salt to taste around ( I use around 1/2 teaspoons)
  • black pepper to taste
  • 1 1/2 cups diced or thinly sliced fresh strawberries
  • Garnish: drizzle with Balsamic vinegar( I used a good grade aged 18 years old) or you can make the glaze below)
  • 2 extra-large fresh basil leaves chopped
  • Optional: chopped freshly minced garlic

Instructions

  1. Preheat oven to 400°degrees.
  2. Slice the bread and place it on a baking sheet.
  3. Brush with olive oil.
  4. Toast the bread it takes 10 minutes or so. ( Add the garlic on top if using)
  5. In the meantime, mix the ricotta with salt, pepper, and 2 teaspoons of oil.
  6. Spread the bread with the mixture.
  7. Top with berries.
  8. Drizzle with balsamic vinegar or glaze.
  9. Garnish with fresh basil.
  10. Note: Here is the recipe to make Homemade Balsamic Glaze:
  11. 2 cups balsamic vinegar
  12.  1/2 cup brown sugar (optional)
  13. Heat balsamic vinegar in a small pot or saucepan over medium heat. Add the sugar.
  14.  Bring to a boil, then reduce heat to medium-low heat.
  15. Simmer, stirring occasionally until the vinegar thickens and is reduced to about 1/2 cup (about 20 minutes or about 8-10 minutes to reduce using the sugar).
  16. Remove from heat and allow to cool completely before serving (about 15 minutes).
