Blueberry Skillet Cake with Rum Sauce

This scrumptious Blueberry Skillet Cake with Rum Sauce is a moist cake that mom would make all summer during the height of the fruit season and a favorite recipe using this delicious fresh fruit.


The blueberry cake dates back to a vintage time of the 1940s era and quite unique as it is baked in a cast-iron skillet and the flavors are fabulously melded together.


Of course, mom would also make a kids version and we have several suggestions for this style of shortcake and it's very versatile with substitutions to be kid-friendly along with an adult style dessert.

Skillet Cakes



One of my favorite pans to use for baking and cooking is cast iron.


The cast iron always good evenly and I only use the parchment paper for this recipe to catch all the
juices but it's just an option.


The cake tastes amazing just as it is or topped with whipped cream.


It's the perfect dessert all year long using fresh or frozen fruits.

Simple Syrup Substitute




Cakes stay moist using a simple syrup drizzled on the top if you're not fond of using alcohol or simply can't have it due to health restrictions, then an extract substitute or even freshly squeezed juice.



To make this cake kid-friendly and non-alcoholic just mix 1 cup of sugar and 1 cup of water together, bring to a boil for 2 minutes.



After the syrup is made there are several extracts available including rum-flavored you can add just around 1 teaspoon or more to taste.



Depending on the fruits you choose to use, adjust the flavoring to compliment them.



The adult version is more of a buttery simple syrup with the addition of rum alcohol that can also be substituted for another flavored favorite liqueur to use in its place.

Ingredients You Will Need


  • flour
  • sugar
  • baking powder
  • salt
  • softened butter plus 4 tablespoons
  • buttermilk
  • lemon extract or vanilla
  • egg
  • fresh blueberries or used frozen blotted dry
  • cinnamon sugar

Tips:


  • Always preheat oven
  • Parchment paper is preferred for easy removal
  • Poke holes in the top evenly before pouring the syrup
  • Don't wait for the cake to cool pour the syrup over the hot cake
  • Do not over mix the batter
  • The cake shouldn't be crumbly, if it looks dry add more buttermilk
  • This cake gets stronger in alcohol flavor the next day

This is a recipe for Blueberry Skillet Cake that is soaked in a rum sauce. There is also substitutions for non alcohol and kid friendly alternatives. The cake is moist and gets better with age!

Ingredients

  • Recipe for Blueberry Rum Skillet Cake
  • 3 cups flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup softened butter plus 4 tablespoons
  • 1/4 cup buttermilk or more
  • 1 teaspoon lemon extract or vanilla
  • 1 large egg beaten
  • 1 1/2 cups fresh blueberries used frozen blotted dry
  • cinnamon sugar 2 tablespoons sugar 1 teaspoon cinnamon mixed together.

  • Kid-Friendly Simple Syrup Recipe:
  • 1 cup water 1 cup sugar boil for 2 minutes together on the stovetop, add any extracts of choice or fresh-squeezed juice to flavor,
  • Garnish after the cake is baked
  • Rum Sauce
  • 1/2 cup butter
  • 1/4 cup water
  • 1 cup white sugar
  • Boil for 5 minutes, then stir in 1/4 cup white rum or dark rum

Instructions

  1. Preheat the oven to 375 degrees.
  2. Line a 10 inch cast iron skillet with parchment paper.
  3. Place the dry ingredients in a bowl and mix them together.
  4. Stir in the milk, egg, lemon extract, and softened butter until it forms a thick dough and just comes together.
  5. If the mixture is crumbly add 1 tablespoon of buttermilk at a time until it holds together.
  6. Press this into the skillet lined with parchment paper.
  7. Scatter the blueberries evenly on top, sprinkle with cinnamon sugar.
  8. Bake at 375 degrees for around 25 minutes or until edges is lightly browned.
  9. In the meantime make the rum sauce.
  10. Combine everything except the rum in a small saucepan.
  11. Boil for 5 minutes.
  12. Stir in rum.
  13. While the cake is warm, poke holes randomly with a fork on top of the cake then pour the hot rum sauce of the top to soak in.
