This recipe for homemade brownies are super easy to make and they really take no time to whip up a batch from scratch.
However, for all my busy readers, you can always keep a few boxes of chocolate brownie mix on hand when in a hurry to make a semi-homemade version that still works perfectly.
Ingredients You Need To Make
- flour
- peanut butter
- egg
- vanilla
- unsweetened cocoa powder
- butter
- baking powder
- Optional Frosting: powdered sugar, unsweetened cocoa powder, butter, vanilla and honey
Tips
- use a parchment-lined brownie sized pan
- use butter, not margarine
- use Nutella, cookie butter, or any spread you prefer in place of the peanut butter for food allergies
- do not over bake the brownies
- these brownies are delightful with or without being stuffed, frosted, or unfrosted

Semi-Homemade Version
If you prefer the semi-homemade version, make sure you buy a famous brand brownie mix and it should only be enough for an 8 x 8-inch pan or divide it into two pans if it's a large package.
These really are a gourmet brownie and the crunchy inside taste more like a cookie, not a cracker so everyone will be fooled on this filling but these brownies are so addicting.

Peanut Butter Cracker Stuffed Brownies
Prep time: 5 MinCook time: 25 MinTotal time: 30 Min
These are stuffed fudgy brownies with peanut butter spread on round crackers baked inside each brownie.
Ingredients
- 1 recipe for 8 x 8-inch square pan below or ( use a store-bought brownie mix)
- Place parchment paper to fit or grease the pan 8 x 8-inch square pan and set it aside, preheat the oven to 350 degrees.
- 1/2 cup butter
- 1 cup of sugar
- 2 eggs
- 1 teaspoon pure vanilla
- 1/3 cup unsweetened cocoa powder
- 1/2 cup flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- Optional Frosting: (from scratch or use canned frosting)
- 3 tablespoons butter softened
- 3 tablespoons unsweetened cocoa powder
- 1/2 teaspoon pure vanilla
- 1 cup powdered sugar
- 1 tablespoon honey
- For the Cracker Filling:
- 1 sleeve round Ritz or other crackers
- peanut butter enough for the top and bottom of each cracker or use another spread you prefer
Instructions
- For the brownies:
- Melt the butter, add all the other ingredients in a bowl and mix until well combined.
- Spread half the batter in the prepared pan.
- Taking one cracker at a time put around 1/2 teaspoon of peanut butter on the bottom press into the brownie pan then top with more peanut butter.
- This will take around 12 crackers to fill the top.
- Pour the rest of the batter on top and bake for 25 minutes.
- Optional Frosting: Mix everything in a bowl until smooth.
- Cool completely, spread with optional frosting if using, then cut into squares.
