We love using all kinds of leftover meats, more than one kind of cheese so this recipe is very adaptable.
This easy recipe doesn't take long to make and it does start with a rue with flour and milk to make the sauce, that's the hardest part and still easy!
I have listed many suggestions below to add some yummy ingredients that you may have just a handful of leftover meat or vegetables that can be used in this recipe version.

Ingredients You Will Need To Make Hobo Snack Mix
- butter
- granulated garlic powder
- shredded sharp cheddar and provolone cheeses
- minced garlic
- milk
- diced ham
- flour
- salt, pepper, (and optional cayenne pepper) to taste
Tools You Will Need
- large deep casserole dish around 2 to 3 quart
- small measuring cups
- spoon for stirring
- knife, food processor with slicer or mandolin to make thinly sliced potatoes

- saucepan to melt the cheese, milk, and flour in around 2 quart

- minced onion (1 small)
- diced sweet or hot peppers ( around 2 tablespoons)

- leftover boneless diced cooked chicken

Ham and Potatoes Au Gratin

Thinly sliced potatoes baked in a cheese sauce with ham and can become a side dish or whole meal.
Ingredients
- 2 cups thinly sliced potatoes( I do them with my slicing attachment on my food processor or mandolin)
- 2- 1/2 cup milk
- 2 cups extra sharp cheddar and provolone mixed ( saving 1/2 cup to sprinkle on top for serving if desired or use it all in the recipe)
- 1 1/2 cups cooked ham diced
- 3 tablespoons flour
- 2 teaspoons minced garlic
- 1 teaspoon granulated garlic
- 4 tablespoon butter
- salt, and pepper to taste
- cayenne pepper optional to taste for heat
- 1 tablespoon freshly chopped parsley for garnishing
- Additions and Suggestions:
- minced onion (1 small)
- diced sweet or hot peppers ( around 2 tablespoons)
- any kind of shredded cheese you prefer
- Italian sweet or hot sausage cooked and diced
- leftover boneless diced cooked chicken
- leftover boneless steak cooked and diced

Instructions
- In a greased deep baking dish, combine potatoes, ham, salt, pepper, and garlic set aside.
- Note: add any other meats or suggestions you prefer in the pan above.
- In a saucepan, melt butter over medium heat, stir in flour until smooth.
- Gradually add milk.
- Bring the milk to a boil and cook stirring for 2 minutes or until the mixture is thickened and bubbly.
- Add cheeses, granulated garlic powder, and cayenne pepper if using, stir until the cheese is melted.
- Pour over the potato mixture and stir gently to mix.
- Bake, uncovered, at 350 degrees for 45 to 55 minutes or until bubbly.
- Garnish with more cheese and parsley if desired.
