Quick Torrone Candy

Torrone is an Italian candy we usually make the homemade version around Christmas time, this is a quick version.


This nougat is quite different from my homemade authentic variation that would take much longer so in a pinch this is terrific and super easy.


Using a microwave, white chocolate, and some marshmallows is the start of this delicious candy confection.


You will need just a few more ingredients to get this candy treat on your holiday table.

Italian Candy



This candy although a quick version was always on our Christmas Eve and Christmas Day holiday tables if you would like one made from scratch with egg white that is Old Fashioned Italian Torrone.


As a child growing up in an all-Italian family, we often found this candy in our stockings on Christmas morning.


This candy is a nougat style with the paper that is edible on the outside with a hint of honey and flavored with extracts like vanilla, orange, or lemon, which were the most common.

Ingredients You Will Need For Torrone(scroll down to the recipe card for exact measurements

  • marshmallows
  • white chocolate
  • almonds, pistachios, hazelnuts or other nuts you prefer
  • vanilla, lemon, or other extracts you prefer
  • cooking spray oil
  • wafer paper or rice paper
  • honey
  • for nuts allergies use pumpkin seeds

Tools You Will Need


  • large deep glass bowls to fit in a microwave
  • wooden spoons
  • spoon for stirring
  • wafer paper
  • food scissors to cut this with
  • small fudge sized pans
  • 4 cup sized measuring cup
  • pastry brush

A Few Tips

  1. Do not over microwave these ingredients, the nougat should be pliable 
  2. brush the wafer (or rice paper) paper with  melted honey before placing and spreading the nougat in the pan
  3. measure exact amounts of ingredients
  4. keep nougat in an airtight container
  5. use a fudge size pan and make them around 1 inch high
  6. for more than one flavor divide the nougat into two bowls prepare a bowl with equal amounts of extract and nuts ( usually use 1 teaspoon of extract and make lemon and vanilla flavors
  7. this can  be melted on the stovetop
  8. I like to press toasted almonds or pistachios on top if someone doesn't like the nuts or have allergies they can pick them off easily
  9. Wrap in snack bags to keep them fresh tie with ribbons then store in tins or glass jar for gift-giving


Quick Torrone Candy

This is an Italian copycat version of Torrone. A quick easy candy made in minutes! This candy is usually found at Christmas time in many Italian households.

Ingredients

  • 1 -10 ounce bag of marshmallows
  • 2 cups of a good grade white chocolate
  • 2 cups roasted nuts (pistachios, almonds, macadamia nuts all are common choices)
  • 2 teaspoons extract of choice vanilla, lemon, orange
  • Note: (you can divide this nougat into two bowls with half the nuts but use 1 teaspoon of flavoring of choice in each bowl)
  • 1/4 cup honey warmed for 5 second
  • wafer paper(found online or in candy shops which are preferred) however you can use also use rice paper
  • Fudge sized pans sprayed with cooking oil you will 2

Instructions

  1. Prepare the fudge pans spraying with cooking oil.
  2. Lay down the wafer paper in the pans and brush with honey set aside.
  3. In a large glass microwaveable bowl add the chocolate and marshmallows.
  4. Microwave 1 minute and stir.
  5. Microwave another minute and stir.
  6. Microwave the third time and add the nuts and flavoring.
  7. Note: if using two flavors set half the nuts and flavoring into 2 different bowls and knead half this nougat into each bowl after the 3 minutes of microwaving and stirring.
  8. Push the nougat into prepared pans with your fingers to spread onto the wafer paper.
  9. Brush the top of the nougat with more honey and then add a second sheet of the wafer (or rice paper whatever you're using) on top and press it down.
  10. Let cool completely then I place this on a cutting board and cut with scissors.
  11. Store in an airtight container.
