Twice Baked Sweet Potato Recipes

Here are three favorite toppings for twice-baked sweet potatoes. These are done in the microwave then broiled or baked for the topping!
Ingredients
- 6 medium sweet potatoes baked slow cooker method or microwaved
- 1/4 cup maple syrup
- 4 tablespoons butter room temperature
- 2 oz whipped cream cheese
- 2 teaspoons vanilla
- 1 teaspoon cinnamon
- Optional Toppings: Pecan Streusel, Marshmallow or Coconut
Instructions
- Cook the potatoes:
- Microwave the sweet potatoes until soft around 7 minutes or bake them until soft. (These can also be done in a slow cooker on low for 8 hours) or boil them for around 20 minutes until tender.
- Cool the potatoes,
- Scoop out the inside and place in a bowl with 1/4 cup maple syrup,4 tablespoons butter room temperature, 2 oz whipped cream cheese, 2 teaspoons vanilla 1 teaspoon cinnamon.
- Mix evenly together and fill the sweet potato jackets.
- Top with your favorite toppings below:
- Pecan Streusel: Mix 6 tablespoons of butter with 1/2 cup finely chopped pecans, 3 tablespoons of flour, and 1/2 teaspoon cinnamon.
- Note: for those with nut allergies use sunflower or pumpkin seeds toasted
- Marshmallow Topping: top the potato with mini marshmallows or jumbo marshmallows cut in half ( optional for the holiday we also add some red and green maraschino chopped cherries).
- Coconut topping: 1/4 cup brown sugar, 1/4 cup pecans chopped, 1/4 cup coconut, 1 1/2 tablespoons flour, 1/1/2 tablespoons melted butter.
- Bake for 10 minutes at 375 degrees or broil for an additional 1 to 2 minutes or until lightly browned.
- For coconut or marshmallows, bake for 7 to 10 minutes, watching closely until browned and melted or 1 minute on the high broiler until toasted.
- Note this is not a topping but to be mixed in with cooked mashed sweet potatoes:
- Savory: add 1/4 cup each sour cream, butter, milk, add 1 teaspoon granulated garlic, salt, pepper to taste, 1 teaspoon chopped parsley, and 3 tablespoons of Parmesan cheese. Optional: add 1/2 cup sauteed mushrooms, spinach, escarole, or swiss chard.
