Meatball Stew

Meatball Stew is the easiest most delicious fast comfort food and very economical to feed a large family.


If you love Italian meatballs in a rich hearty sauce, this is the meal of your dreams!


The kids love it, leftovers are great and can even be used to top pasta or rice, what can be easier?


Making a flavored ground beef is all you need to make an old-fashioned fabulous stew, and served with my "Easy No-Knead Bread" recipe will go perfectly with this stew.

This quick and simple recipe is a family favorite and the kids as adults still ask for it.


Of course, you can use other meat suggestions, and I will provide them in the recipe if you're not a big fan of Italian-style meatballs.

Italian Meatball Stew



This meatball stew is bursting with flavors of garlic and simmered in a fabulous rich tomato sauce.


The whole meal can be prepared quickly and made in a slow cooker after browning the meatballs, a pressure cooker, or an instant pot.


The pot can be filled with any of your family's favorite vegetables and use this as a guideline.


If you have any meatball stew left over the next day, this is perfect poured over pasta, baked potatoes or rice.

Ingredients You Will Need To Make This Recipe (scroll to the printable recipe card for exact measurements)

  • ground chuck or sirloin
  • tomato paste
  • diced tomatoes
  • potatoes cut into cubes
  • peas
  • carrots
  • green beans
  • sliced mushrooms
  • onions
  • water
  • red wine of choice
  • salt
  • pepper
  • cayenne
  • cloves minced garlic
  • dried oregano
  • parsley
  • basil
  • prig rosemary
  • bell pepper
  • breadcrumbs
  • egg
  • grated cheese

Tips

  1. brown the meatballs first(baked, fried or air fry)
  2. use any kind of liquid beef broth, wine, water
  3. this stew can be made in a slow cooker, instant pot or stovetop
  4. other meats can be substituted or even combined

Stew is whatever you like in it and is so versatile.


IF you're not fond of one of the vegetables, add a different one, some folks rather have no peppers and more onion, so adapt away!.


I do love the addition of wine but you can substitute water, beef broth, or even apple juice.


This pot is full of deliciousness all in one bowl and the easiest stew I have ever made!

This is an economical stew made with meatballs in a rich Italian tomato sauce. Perfect with a loaf of freshly baked bread.

Ingredients

  • Meatball Mixture:
  • 1 1/2 pound ground chuck, or  sirloin
  • 1/2 cup bread crumbs
  • 1 egg
  • 2 cloves of freshly minced garlic
  • 1-1/2 teaspoons granulated garlic powder
  • 2 tablespoons chopped fresh parsley
  • salt, and pepper to taste
  • 1/2 cup grated cheese
  • oil for frying
  • Tomato Sauce for Stew:
  • 1 can tomato paste
  • 1 12-ounce can of diced tomatoes
  • 4 potatoes cut in cubes or more if you love potatoes more than the rest of what is in there!
  • 1 cup each of corn, peas, carrots, green beans, sliced mushrooms, and onions, or you use more of anything you like
  • water
  • 1/2 can of red wine of choice (use the diced tomato can)
  • 2 cups of water, beef broth, or apple juice
  • salt, pepper, cayenne to taste preference
  • 4 cloves minced garlic
  • dried oregano, parsley, and basil or fresh if you have it all to taste
  • 1 sprig rosemary
  • 1 bell pepper cleaned and cut up

Instructions

  1. In a large bowl mix the  1 1/2 pound ground beef, breadcrumbs, egg, garlic, parsley, salt pepper, and grated cheese. together.
  2. Form into meatballs. Brown them first no matter what method of cooking you use.
  3. Heat a large stew pot ( these can be fried in a separate pan, baked, or seared in an instant pot) and brown the meatballs in 1 inch of heated oil.
  4. Remove the meatballs from the pan, and drain most of the oil out.
  5. Note: After browning the meatballs on both sides you can cook the stew in an instant pot, slow cooker, or use the same stovetop stew pot.
  6. Add the tomatoes, paste, garlic, and all the rest of the vegetables and seasoning ingredients.
  7. Add the meatballs last.
  8. Simmer for 1 hour or until the vegetables are soft  (potatoes may cook a little longer).
  9. Instant pot for 25 minutes in pressure cooker mode
  10. Slow Cooker low for 6 to 8 hours or on high for 4 to 6 hours.
  11. Note: if stew gets too thick add more water or beef broth.
