Chicken just cooled like Shrimp Scampi is a delicious alternative for those allergic to seafood and this sauce is the same used in that dish although is scampi a seafood in Italian.

The chicken is seasoned, sauteed, and then coated in a buttery wine and lemon sauce that just complements this dish perfectly.

A versatile style scampi that can be served just as it is or with any of the many suggestions I have below listed.

This fork-tender chicken is so flavorful, the flavors are fragrant with just the right blend of spices coating the chicken.

Even if you are a shrimp seafood scampi lover, using chicken is a nice change and just as easy to make using the same ingredients.

Perfect Alternatives To Seafood



I have several readers who write and tell me they love some of the recipes I have for seafood but are allergic to seafood.


When I adapted the ingredients I had the famous scampi recipe in mind since that one is the easiest to adapt and made the perfect substitution for fish.


The buttery wine sauce with lemon compliments this sauteed chicken and it's so tender, juicy, and fork-tender.


Actually, this basic scampi sauce is delicious using boneless pork in this recipe.

Tips

  1. coat the chicken first and saute before adding to the sauce
  2. use only fresh lemon
  3. use a wine that you would drink and taste great
  4. cook the pasta and reserve some of the pasta water in case the sauce is too thick
  5. add more red pepper and spices to taste

If you love easy recipes this Chicken Scampi is super simple and between the sauteed chicken and sauce cooking time is around 35 minutes.

The buttery wine sauce is perfect poured over any pasta, rice, and even on a baked potato.

Chicken Scampi

Chicken Scampi

This is a classic scampi normally made with seafood. For those who are allergic to seafood, this is the perfect alternative to using chicken. The sauce is buttery with garlic and perfect over pasta, rice, or even potatoes.

Ingredients

  • 1 package linguine pasta cooked to package instructions in saltwater in drained
  • 1 cup chicken broth
  • 2 cloves garlic, minced
  • 1 teaspoon granulated garlic powder
  • 1 pinch red pepper flakes or more to taste
  • 1 pinch kosher salt and freshly ground pepper or more to taste
  • 1/2 cup dry white wine
  • 1 fresh lemon, juiced
  • 4 tablespoons butter
  • 1/4 cup finely chopped fresh parsley leaves and more for garnish
  • 1 lemon sliced for garnish is optional
  • Canola or vegetable oil to saute chicken
  • 3 boneless chicken breast cubed
  • 1 cup all-purpose flour
  • 1 tablespoon dried parsley
  • 1 teaspoon granulated garlic powder
  • 1 teaspoon dried Italian seasoning
  • 1 /2 teaspoon salt, pepper, or more to taste
  • 1 ziplock bag or pie plate
  • Place the flour, herbs, and spices in a plastic bag or pie plate for coating the chicken in then set aside.

Instructions

  1. Coat the chicken in either a pie plate with the above herbs and spices or in a plastic bag to coat.
  2. Heat the oil to medium heat to 1 inch deep.
  3. In a large deep fry pan, saute the coated floured chicken and brown on both sides.
  4. Place the fried chicken on paper towels to drain.
  5. In the same pan add all the rest of the ingredients and simmer for around 2 minutes scraping any bits left in the pan and stirring.
  6. Place the cooked chicken back into the scampi sauce and simmer until the sauce thickens just a little around 2 minutes.
  7. Cook the pasta in salt water to package instructions, drain, and place in a large pasta bowl.
  8. Pour the chicken scampi on top of the pasta.
  9. Garnish with lemon slices, more parsley, and red pepper flakes if desired.
  10. Note: if the sauce gets too thick you can add pasta water or more chicken broth heated to the sauce.
