Serving Cornbread
I am often asked what we serve this delicious tender bread with so here are some suggestions.
Barbecued Chicken, Pulled Pork, Burnt Ends Pork Belly, or smoked brisket, with any kind of Cowboy Beans is a great start for serving this bread on the side.
Chili and Beer Stews are also another perfect comfort food.
Ultimately fresh out of the oven with butter is the best anytime even or spread with a delicious berry jam is another favorite.

Tips for Making Moist Cornbread Recipes
- Only stir to moisten the batter
- Any additional items are to be folded in at the end
- Do not overbake the recipe
- Don't forget to grease the pan
- For a thicker cornbread use, a small pie plate greased this makes an 8-inch square
- Always preheat the oven first
- Use the toothpick method in the center to ensure the cornbread is dry in the center

Mix-in for Basic Cornbread
- Bacon and Cheese: 1/2 cup of crumbled bacon and 2 tablespoons sundried tomatoes and 1 teaspoon of granulated garlic powder, 1/2 cup shredded cheddar
- Green chile and cheddar cheese:1/4 cup of chopped green chiles, 1/3 cup of shredded cheddar cheese, 1/4 teaspoon granulated garlic powder, 1 teaspoon chili or taco seasoning.
- Breakfast sausage and cheddar:1/3 cup of crumbled cooked breakfast sausage and 1 teaspoon chopped green peppers, 1 teaspoon minced onions 1/2 cup shredded cheddar cheese.
- Tex Mex:1/4 cup of fresh or frozen corn kernels, 1/4 cup black beans, 1 teaspoon granulated garlic, 1 tablespoon green bell pepper, and 1 tablespoon of minced fresh basil.
- Italian pepperoni:1/4 cup of finely chopped pepperoni, 1/3 cup grated parmesan, 1 teaspoon granulated garlic powder, 1 teaspoon dried Italian seasoning, and 1 teaspoon freshly ground black pepper topped with shredded Italian blended cheeses.
- Spicy shrimp creole: 1/2 cup of chopped cooked shrimp, 1 teaspoon finely diced jalapeno, and 1 teaspoon of creole seasoning.
- Apple cinnamon nut:1/3 cup of chopped pecans, 1 cored and skinned diced apple and 2 tablespoons of brown sugar 1 teaspoon cinnamon.
- Cranberry Orange:1/3 cup of fresh or frozen cranberries, 1 tablespoon orange zest, and 3 tablespoons of maple syrup.
- Blueberry and lemon:1/2 cup of fresh or frozen blueberries, 1/2 teaspoon lemon extract, and the zest of 1 lemon.
- Broccoli and Cheddar:1 cup of finely chopped broccoli, 1 teaspoon granulated garlic, and 1/2 cup shredded sharp cheddar cheese

Just think of what will go great with the meal you preparing and don't be afraid to add what you like.
If you love sliced olives, peppers, onions, and fresh garlic, add what you like or substitute broccoli for mushroom, etc,
These are just some of the ones I made we love in our home, and sometimes I make one plain and the other filled with whatever I may have in the refrigerator.

Ingredients
- Semi-Homemade Cornbread
- 2- 8.5 ounce boxes of cornbread muffin mix (I use Jiffy)
- 1 cup mayonnaise (we use Hellmann's)
- 3 teaspoons sugar
- 2 eggs
- 1/2 cup melted butter (1 stick)
- 2/3 cup buttermilk (store-bought or make your own adding 3 teaspoons white vinegar to whole milk)
- Homemade Cornbread Made From Scratch Recipe
- 2 cups all-purpose flour
- 1 cup fine yellow cornmeal
- 1 cup granulated sugar
- 1 teaspoon salt
- 1 1/2 tablespoons baking powder
- 1/2 cup vegetable oil
- 1/2 cup butter melted
- 3 large egg
- 1 1/4 cup milk

Instructions
- This is the basic Classic Cornbread Recipe below feel free to add anything you like or leave it plain.
- Prepare an 8-inch pan or muffin tin with butter or oil spray.
- Preheat the oven to 400 degrees.
- Before you start: Remember as you make this recipe, it's just stirred until moistened do not overbeat this recipe.
- Combine the mayonnaise, eggs, sugar, buttermilk, and butter mixture evenly.
- Stir in the cornbread mix.
- Fold in any mix-in suggestions you like.
- Spoon into prepared pan.
- Bake at 400 degrees for 25 minutes or until the center comes out clean using the toothpick method.
- Serve warm with butter or your favorite jam.
- Homemade from Scratch Directions:
- Preheat oven to 350 degrees. Grease a 13 x 9 inch pan and set that aside.
- Whisk together (the dry ingredients) the flour, cornmeal, sugar, baking powder, and salt and set that aside. In a separate bowl add the oil, butter, milk, and eggs and whisk together.
- Blend the two mixtures evenly together just until combined.
- Pour into the prepared pan.
- Bake for around 25 minutes or until the middle is set using a toothpick to ensure doneness.
- Cool before cutting.
