- Optional: additional chocolate chips for garnish

Tips
- Any cookie mix flavors work for this crust
- If the mix is more than 17 ounces add another egg
- Add a little cinnamon for a fall flavor
- Add flavored extracts to change the cheesecake filling flavor
- Make sure the middle is set when baking, it will firm up after baking
- Store these in the refrigerator for leftovers covered
- For thicker bars use a 12 x 9 brownie pan
- Use a wet knife to cut the bars easily

This is using chocolate chip cookie mix and doctoring it up with a few ingredients to turn it into a decadent cheesecake bar. Easy, quick and delicious!
Ingredients:
- 8 tablespoons softened butter
- 2 small packages of Chocolate Chip Cookie Mix 7.5 ounces or use one of the 17-ounce sizes
- 1egg
- 1 8 ounces cream cheese, softened
- 1 1/4 cup sugar
- 2 eggs
- 1 teaspoon vanilla
- Optional Topping Before Baking:
- 1/2 cup or more of any combinations:
- Use chopped maraschino cherries
- Use mini chocolate chips
- Use peanut butter cups chopped or another candy you prefer
- Use coconut
- Use toasted nuts of any kinds of seeds
- Use mini marshmallows and chocolate chips
Instructions:
- Heat oven to 350 degrees. Spray bottom of 12 x 9 brownie pan. lined with parchment paper
- place the cookie mix in a bowl with the butter and stir it until you make fine crumbs.
- Add the egg until combined.
- Press most of the crumb mixture on the prepared pan (reserving some for the top), bake it for 10 minutes.
- In the meantime beat the cream cheese, eggs, sugar and vanilla until combined and smooth.
- Bake this for around 25 to 30 minutes until firm.
- Cool before cutting into bars.
- Store any leftovers in the refrigerator in a covered container.
