There are so many alternatives when transforming a meal from fat to healthy fats and high calorie to low calorie without losing all the great flavors.
Vegetables enhance the taste of foods, and with the many suggestions I offer, and this chicken dish can taste different every time you prepare it.
I love Parmesan Roasted Tomatoes, and the crunchy topping, however, this dish gives you this all in one bite in one casserole pan!
Ingredients You Will Need

- Boneless Chicken Breasts Sliced 1/4 inch thick to 1/2 inch
- Bell Peppers cleaned and sliced
- Fresh Mushroom sliced
- Minced garlic
- Beefsteak or Vine Ripe Tomatoes sliced
- a handful of Fresh Basil
- a handful of Fresh Parsley save some for garnish on top after baking
- Optional: dried oregano
- Salt, Pepper to taste
- Italian Flavored Panko Bread Crumbs
- Olive Oil for drizzling over the top
- Butter Melted to mix with the bread crumbs
- Grated Parmesan Cheese
Other Additions:
- Onions sliced or pearl onions
- Sliced mushrooms
- Broccoli florets or cauliflower
- Green beans
- Peas
- Brussels sprouts
- Potato wedges
- Sweet Potato medallions
- Fresh asparagus spears
- Zucchini or another summer squash
- Cabbage wedges boiled
- Artichokes hearts
Tips in the Kitchen:
- Use only vine-ripe sweet tomatoes or canned whole tomatoes have to be of very good quality like San Marzano
- Use Italian seasoned panko bread crumbs
- Use a parchment-lined pan for easy cleanup
- For another flavor of seasoning try Taco Mix instead of Italian seasoning
- Don't overcook the chicken, this will cook quickly as it's thinly cut
- Some of the vegetables (like potatoes) need longer cooking, you may want to pre-cook certain ones in the microwave first before adding them to this casserole
- Frozen vegetables can be substituted for fresh that's in the suggestions list
- Leftover corn, carrots, or whatever vegetables you have can be added to the pan at the end
- If the chicken is too thick it will be dry, add some low sodium low-fat chicken broth around 1/2 cup if you cut it thicker

- Use crushed pork rinds instead of panko (perfect alternatives for diabetic meals also)
- Substitute chicken with lean turkey breast filets for a change
- Slice the chicken or turkey breast into strips and air fry with vegetables of choice for low carb fillings for a wrap
- Seafood of any kind can be used in place of chicken
- Serve the chicken and vegetables on top of a vegetable salad
- Use pumpkin seeds, sunflower seeds, slivered almonds instead of panko or another nut you prefer on top of this casserole

If you are looking for a healthy baked chicken topped with vegetables that easy all in one pan, this is a great recipe. Even the leftovers are great in wraps, on top of salad and it's the perfect light warm weather meal!
Ingredients:
- 4 Boneless Chicken Breasts Sliced 1/4 inch thick to 1/2 inch
- 2 Bell Peppers cleaned and sliced
- 8 ounces of Fresh Mushroom sliced
- 4 cloves minced garlic
- Beefsteak or Vine Ripe Tomatoes sliced
- a handful of Fresh Basil
- a handful of Fresh Parsley save some for garnish on top after baking
- Optional: dried oregano
- Salt, Pepper to taste
- 2/3 cup of Italian Flavored Panko Bread Crumbs or use ground pork rinds
- Olive Oil for drizzling over the top
- Optional: 2 tablespoons extra virgin olive oil to mix with the bread crumbs
- 1/2 cup or more Parmesan Cheese
- Preheat the oven to 375 degrees.
- Options:

- Substitute all olive oil or grapeseed oil for butter or omit totally

Instructions:
- Mix the panko bread crumbs with oil and set aside if using.
- Slice the chicken in 1/4 inch thick slices, place on the parchment-lined 13 x 9 pan.
- Top the chicken with tomato slices, mushrooms, peppers, and sprinkle each tomato with panko.
- Add any other suggestions above you prefer.
- Drizzle the top with olive oil and evenly sprinkle with grated cheese.
- Place a little minced garlic on each panko top tomato.
- Sprinkle with salt, pepper, oregano, add the basil, and some parsley on top.
- Bake at 375 degrees for around 25 minutes, do not overbake the chicken.
