With rice and broccoli tossed in soy sauce prepared ahead of time, you will have this basic chicken with an Asian-flavored sauce slow cooker with just a few basic ingredients.
It's kind of mock stir fry in flavors but healthier since it has none of the oils used for frying.
We love this healthy version with a little sweet and spicy flavored sauce.
Being very busy, this is a welcome change to standing over a hot stove and the perfect summertime meal.
Using a slow cooker or instant pot certainly eliminates time spent in the kitchen.
The best part is you can set the slow cooker on low and come home to a delicious hot meal that tastes like you've been cooking all day long.

- boneless chicken breasts cubed (or use leftover rotisserie chicken or frozen grilled chicken sliced and reduce the cooking time)
- chicken or beef gravy ( use cream of chicken soup)
- soy sauce
- granulated garlic powder
- bell pepper cleaned and sliced
- brown sugar
- pineapple juice, beef broth or chicken broth
- cornstarch for thickening
- Optional: a pinch of ginger and cayenne pepper
- quick-cooking rice made-to-package instructions
- frozen broccoli prepared to package instructions

Other Cooking Methods
- Stovetop: Brown chicken dump everything in the pan and simmer for one hour. Thicken with cornstarch if necessary.
- Instant Pot: Place on the sear the chicken with butter and olive oil. then set to the pressure cooker mode for 45 minutes.
- Slow Cooker: Place on low for 6 to 8 hours. High 4 to 6 hours.

Tips and Ideas
This can be made ahead of time with no problem.
To save time, make the broccoli and rice the night before and reheat before serving..
For the chicken Asian style, just set it on low in the morning and come home to a hot meal to pour over your side dish.
Remember for those who aren't rice lovers, this can also be served over mashed potatoes, hard-crusted bread, baked potatoes, or your favorite pasta!
Slow Cooker Asian Chicken with Broccoli and Rice

This is super easy along with delicious no-fuss meal with Asian flavors. The chicken is cooked several methods however this was done in the slow cooker then poured over broccoli and steamed rice.
Ingredients:
- 3 boneless chicken breasts cubed (or use leftover rotisserie chicken or frozen grilled chicken sliced and reduce the cooking time)
- 1 16 ounce - jar or canned chicken or beef gravy ( or use cream of chicken soup or beef mushroom soup)
- 1/4 cup soy sauce
- 1 teaspoon granulated garlic powder
- 1 bell pepper cleaned and sliced
- 2 tablespoons brown sugar
- 1/2 cup pineapple juice, broth or chicken or vegetable broth
- 1/4 cup of water mixed with 1 tablespoon cornstarch for thickening
- Optional: a pinch of ginger and cayenne pepper
- Below is Side Dishes Cooked separately:
- Cooked separately:
- 2 cups of quick-cooking rice made to package instructions
- 1 10 ounces package of frozen broccoli florets prepared to package instructions or more per family size
- Mix the cooked rice and broccoli with 1/4 cup water mixed with 1/4 cup soy sauce, salt, and pepper to taste set aside.
Instructions:
- I prefer to saute the chicken and brown it on each side in a little butter or olive oil salt and pepper.
- Add all other ingredients except for the rice and broccoli
- Note: The cooked rice and broccoli are cooked to package instructions just before serving, also see alternative suggestions below for side dishes.
- Add all the other ingredients with the chicken to the slow cooker on low for 6 to 8 hours. High 4 to 6 hours. If using precooked chicken then this needs to cook only for 2 hours on high.
- 15 minutes before it's cooked, if the sauce needs thickening then add 1/4 cup water with 1 tablespoon of cornstarch mixed in a little bowl and pour it into the pot.
- Spoon the rice and broccoli on a plate and pour the sauce and chicken on top.
