Blueberry Crumble Bars
These are a crumble-style bar with fresh blueberries and a cookie crust. The crust is very buttery and similar to shortbread cookies.

Ingredients
- Blueberry filling
- 2 cups fresh blueberries ( you can use frozen but blot dry)
- 2 teaspoons cornstarch
- 1 tablespoon freshly grated lemon zest
- 1 tablespoon freshly squeezed lemon juice
- 1/4 cup white sugar
- 1/4 teaspoon allspice or cinnamon
- Mix the above ingredients and set aside while mixing the shortbread dough.
- Cookie Dough and Topping
- 1 and 1/4 cups flour
- 1/2 cup white sugar
- 1/2 teaspoon baking powder
- 1 stick of butter softened plus 2 tablespoons
- 1 egg yolk
- Additional Ingredients for Reserved Dough
- 1 cup reserved dough from the above recipe
- 2 tablespoons brown sugar
Instructions
- Preheat the oven to 375 degrees.
- Prepare a 12 x 6 brownie-style pan or 9 x 9 square and line it with parchment paper. Set aside.
- Mix the butter, sugar flour baking powder, and egg yolk together with a pastry blender or fork, saving around 1 cup of dough for the top.
- Press 2/3 of the dough into a 12 x 6 rectangular pan or 9 x 9 square pan that has been lined with parchment paper.
- In the bowl with the reserved dough saved, knead in the 2 tablespoons of brown sugar evenly into the dough.
- Pour the blueberry filling. the mixture on top of the dough-lined pan.
- Dough reserved topping with small little pieces evenly (as shown in the photos), then place in the preheated oven.
- Bake at 375 preheated oven for around 35 to 45 minutes depending on the size pan or until golden brown on top.
- Cool completely and cut into bars.
- I store any leftovers in a covered plastic container in the refrigerator and let them come to room temperature.
