Beef Enchiladas

These Beef Enchiladas are a one-pan delicious tasty casserole.


We have stuffed a flour tortilla with a cheesy beef filling that the whole family enjoys and asks for often.


Although the enchiladas are normally made with corn, we prefer the flour kind, use whatever your family enjoys.


Usually, a burrito is made with a flour tortilla and is a handheld food, whereas the enchiladas are made with a corn tortilla and drenched with cheese and sauce to be eaten with a fork.


We love American Mexican food for a change and these are not only delicious but easy and fun to make.


You can even get the kids to help fill and I have several suggestions for additional fillings and toppings to be and over the top meal.

Other Meat Fillings:


  • Cooked Chicken (rotisserie chicken works great off the bone as its already flavored)
  • Ground Chicken or Turkey
  • Leftover Turkey chopped
  • Ground Pork and Beef or Venison combined 
  • Shredded Pulled Pork
  • A Combination of Shrimp, Scallops, and Crabmeat ( I only use rice, diced tomatoes for the filling with seasonings and seafood) then fill with cheese

  • Black olives
  • Chopped onions
  • Chopped bell peppers assorted colors red, yellow and green
  • Canned whole or stewed tomatoes chopped

Ingredients You Will Need

  • ground beef, ground turkey, ground chicken or a mixture ground beef with ground pork or ground venison, shredded pork, pulled chicken or leftover rotisserie chicken off the bone
  • salt and pepper
  • chili seasoning
  • granulated garlic
  • cayenne pepper to taste
  • fresh yellow and white cob corn cut off the cob ( or use frozen corn)
  • diced green chilies or use any kind of bell peppers, jalapenos, or whatever kinds you prefer
  • black beans, pinto beans rinsed
  • cooked brown rice to package instructions or any other rice you prefer
  • large flour tortillas or corn
  • shredded or sliced Monterrey or Mexican blended cheese ( used sliced for inside shredded for the top)
  • homemade recipe of red enchilada sauce (see recipe below) or use canned store-bought
  • Optional: sliced black olives, chopped diced tomatoes, shredded lettuce for serving, sour cream, mashed avocado
  • Note: you can substitute any kinds of beans even refried beans for the filling or add more beef and omit beans all together. If you don't like corn leave it out. This is totally adaptable, just add more or less what you prefer. If you rather add diced onions to the meat, that's another suggestion.
  • chopped fresh flat-leaf parsley or cilantro

Enchilada Sauce

  • chili powder
  • cumin
  • onion powder
  • minced garlic
  • salt pepper, cayenne
  • finely chop chilies (I put them in the food processor with the tomatoes)
  • self-rising flour
  • canola or vegetable oil
  • beefsteak tomatoes in the food processor ( you can also add the onion, garlic, and chilies)

Beef Enchiladas

This is an easy beef filled flour tortilla casserole with freshly made enchiladas sauce and melted cheese. A Mexican/American popular meal.

Ingredients:

  • 1 1/2 pound ground beef, leftover chopped turkey, ground turkey, ground chicken or a mixture ground beef with ground pork or ground venison, shredded pork, shredded cooked chicken or leftover rotisserie chicken off the bone
  • salt and pepper
  • 1 teaspoon chili seasoning
  • 1 teaspoon granulated garlic
  • cayenne pepper to taste
  • 1 small boiled fresh yellow and white cob corn cut off the cob ( or use frozen corn)
  • 1 (4-ounce) can of diced green chilies or use any kind of bell peppers, jalapenos, or whatever kinds you prefer
  • 1 (15.5 ounces) can black beans, pinto beans rinsed or use any kind of beans you like
  • 1 cup cooked brown rice to package instructions or any other rice you prefer
  • 8 large flour tortillas or corn
  • 3 cups Monterrey or Mexican blended cheese
  • 1 homemade recipe of red enchilada sauce (see recipe below) or use canned store-bought
  • Optional Toppings: sliced black olives, chopped diced tomatoes, shredded lettuce for serving, jalapeno peppers chopped,  sour cream,  and mashed avocado.
  • Note: you can substitute any kinds of beans even refried beans for the filling or add more beef and omit beans all together. If you don't like corn leave it out. This is totally adaptable, just add more or less what you prefer. If you rather add diced onions in the meat, that's another suggestion.
  • Garnish:
  • 1/4 cup chopped fresh flat-leaf parsley or cilantro

Instructions:

  1. Saute ground beef in 2 tablespoons canola oil with, salt, pepper, chili seasoning, granulated garlic (adding more or less to taste along with cayenne pepper if using), until and pink is gone.
  2. In a medium-size bowl, add cooked rice, rinsed beans, green chilies, corn, and mix together and stir in the seasoned beef.
  3. Layout the tortilla, adding an even amount of filling down the center, pour a little sauce on top and sprinkle with cheese ( or add a slice of cheese), roll up and place in an oil sprayed casserole dish.
  4. Continue filling all the tortilla placing side by side.
  5. Top with the sauce and sprinkle evenly with the rest of the cheese.
  6. Bake until cheese melts around 15 to 20 minutes on 350 degrees.
  7. Garnish with parsley of choice,  shredded lettuce, chopped tomatoes, black olives, jalapeno peppers, mashed avocado, and sour cream if desired.
  8. Enchilada Sauce
  9. 1/4 cup chili powder
  10. 1/4 teaspoon cumin
  11. 1/2 teaspoon onion powder
  12. 1 clove minced garlic
  13. salt pepper, cayenne
  14. 1/2 can finely chop chilies (I put them in the food processor with the tomatoes)
  15. 2 tablespoons self-rising flour
  16. 1/4 cup canola or vegetable oil
  17. 2 or 3 pureed beefsteak tomatoes in the food processor ( you can also add the onion, garlic, and chilies)
  18. In a small saucepan add flour, oil, and chili powder. Stir constantly until lightly browned. Add the tomatoes puree, onion, garlic, and peppers. Add salt and pepper to taste and cook for 10 minutes.
