The memories flood back to the days where I was a little girl and always licking the batter off the spatula.
Mom loved baking and this cookie always seemed to have my heart when it came chocolate cookies recipes.
I guess because it was such a great dessert and had different topping all the time and made it so special.
As a kid, I was so impressed and not knowing it was the same cookie that mom topped with bananas and ice cream to make a cookie banana split or different flavored ice cream with sprinkles.
Dad's favorite was always the banana split version and mom liked hers with shredded coconut and Hershey chocolate syrup in a can drizzled over the top!
Whatever your favorite way to serve a cookie with ice cream, this is the perfect recipe.
You may remember my summer favorite strawberry buttermilk skillet shortcake and grandma always made everything in cast iron like her Italian skillet hamburgers were always on the table once a week and mom loved deep dish skillet pizza on our charcoal grill!

Growing Up
Using cast iron for baking, cooking on the stovetop or even on a grill, always seems to taste better and reminds me of the old days, it must be the comforting memories of grandma and mom.
It's basically the only cookware besides stainless steel pans that we used in the 60s until Teflon came out!
Of course, you can use anything you like to bake this particular cookie in, however, the traditional way is to use cast iron skillets.
They even have cute little personal size cast iron pans (round 6-inch pans now) that you can make individual desserts instead of one great big one!
If you ever had a pizookie at BJ's brewhouse, a National Restaurant Chain, which serves the dessert in a personal cast iron pan, (I love to get the Macadamia Nut Pizookie) it's so good, don't miss my copycat recipe and try it in one large pan like this recipe.

The batter is divine, the cookie is nothing like a brownie taste, so if that's what you're thinking, these are not dense or heavy like a brownie.
The cookie is perfect with a great cup of your favorite flavored coffee (mine is pumpkin spice), tea or another favorite of mine, Nutella hot cocoa.
Easy and Impressive
This skillet cookie dessert is one of my families favorite desserts here in my home.
When the kids were little they always asked for a big skillet cookie to take to a school birthday party.
The kids always went crazy for this one big cookie on a big plate, I loved watching their eyes widen.
Back then in the 1980s when I made them, I frosted them with chocolate icing and sprinkle them with mini chocolate chips or m&ms.
That was my version of a double chocolate-chocolate skillet cookie!
The recipe is so easy and versatile to create so many different desserts!

Ingredients for Chocolate Skillet Cookie
- butter
- brown sugar
- vanilla extract or almond extract
- unsweetened dutch cocoa powder
- egg
- flour
- baking soda
- salt
- cinnamon
- Optional:
- chocolate chips, coconut, chocolate chunks, peanut butter chips, colorful sprinkles on top, chocolate frosting and mini chocolate, whipped cream, ice cream, jams, fruits, nuts
Sweet Suggestions:
I have a few delicious varieties and several versions I created in the past.
Around birthdays I always used sprinkles, chopped candy bars, flavored chocolate chips or chocolate chunks.
Even though the kids weren't big on coconut, coconut and chocolate chunks on top reminded me of a "Mounds candy bar, which as I said before mom and I loved.
You can adapt this recipe any way you like, perfect for that after-dinner dessert for guests or birthday bashes!
Somehow I always thought serving a slice with powdered sugar on top with a scoop of vanilla bean ice cream was just an elegant ending to a perfect dinner party.

More Flavor Suggestions:
- Decorate the cookie to a party theme
- Frost with colorful tinted frostings using vanilla canned or chocolate
- Toss sliced fruit in a warmed jam and served on top with whipped cream
- Make a smores topping using cinnamon toast crunch, mini marshmallows and chocolate chips on top while still warm
- Use a different extract, orange, coconut, or almond in the batter
Pans To Use?
If you don't have a 10 inch cast iron skillet, use any 10-inch pan you have.
The pan you use can be aluminum-based or cast iron.
As long as you place the parchment paper for easy lifting and removal anything will be fine.

This version is for low carb, keto and diabetic friendly to also enjoy!
Keto Chocolate Skillet Cookie:
- 6 tablespoons almond flour
- 3 tablespoons unsweetened cocoa powder
- 1 large egg
- 2 tablespoons butter
- 2 tablespoons unsweetened almond milk
- 1 teaspoon baking powder
- 1 teaspoon grated orange, lemon peel or use cinnamon oil
- 2 tablespoons erythritol
- Options: sugar-free chocolate chips 1 cup
- pinch of salt
- Place all ingredients in a food processor except the chocolate chips.
- Mix until just combined.
- Fold in the chips.
- Place the ingredients from your food processor to 8-inch cast-iron skillet lined with parchment paper.
- Bake at 350 for around 25 minutes and use the toothpick method to check the middle. If not set continue baking for 2 more minutes.
- Cool around 5 minutes, lift the parchment paper cake onto a large plate.
- Top with sugar-free fruits, unsweetened whipped cream or whatever you like.
The Batter
I really am the plain cookie lover in the family, everyone wants double chocolate in the batter.
Personally, I just love my skillet cookie, with a little powdered sugar on top for presentation.
Again, you can adapt away add the flavoring extracts and candy ingredients you like.
My dad loved the cookie spread with jam and sprinkled with coconut when it cooled.
The kids love m&m's on top of it frosted!

ingredients:
- 1/2 cup butter (1 stick), melted
- 3/4 cup packed brown sugar
- 1 teaspoon vanilla extract or almond extract
- 3 tablespoons unsweetened dutch cocoa powder
- 1 large egg
- 1 cup flour
- 1 teaspoon baking soda
- pinch of salt
- dash of cinnamon
- Optional:
- Add 1 cup or one or assorted combinations to the batter or on top of the cookie before baking
- chocolate chips, m&m's, coconut, chocolate chunks, peanut butter chips, colorful sprinkles on top, chocolate frosting and mini chocolate chips, mini chocolate chips or chunks, toffee chips or even candy bars. If you would like nuts in it use 1/4 cup in addition.

How to cook Chocolate Skillet Cookie
- Preheat the oven to 350 degrees and line a 10 inch cast iron skillet with parchment paper.
- (you can also oil spray the pan, however, this makes it easier to remove and just cool in the pan.)
- Combine the melted butter, brown sugar, vanilla or almond extract, and cocoa powder in a large bowl.
- Stir in the egg until blended. Add the flour, baking soda, cinnamon, and salt.
- Spread the batter to the prepared skillet and add the options on top if using in the batter or sprinkled on top and lastly, the options can be placed on top of a frosting cookie and decorated to the theme of your party.
- Bake until middle is set do not over bake this. Check it at 20 minutes.
- Cool to warm.
- Serve slightly warm or cold with your favorite flavor ice cream or frost with chocolate icing.
- Other suggestions: top with whipped cream, leave it plain, or add some fruits glazed with a warm jam coating.

- 3 cups powdered sugar
- 2/3 cup dark unsweetened cocoa powder

- 1/3 cup milk
