I have been meaning to write this one for years now and finally got around to writing it down instead of just making this simple recipe without sharing it to my readers!
This is really one of our families favorite summer pie recipe.

This Pie Really Shouts Summer!
Fresh fruits have always brought a warm sunny feeling that spring and summer are upon us.
As soon as the weather gives off that bright ray of sunshine, this is my go-to favorite pie recipe all summer long.
Keeping some of these pantry ingredients on hand really makes it convenient when I have to bring something to a potluck or picnic gatherings.
I will also give you a heads up, print off several copies because everyone will want this recipe!
Ingredients You Will Need
- strawberry jello (3-ounce size)
- vanilla pudding ( the kind you cook 2.75-ounce size)
- water
- lemon juice
- whipped topping
- sliced strawberries
- deep dish baked pie crust homemade or store-bought cooked and cooled
- you can also use a premade graham cracker crust for quick unexpected guests
- Optional: mint leaves for garnishing and more whipped topping
Tips
- Chill the mixture just until cold and thickened around 2 hours
- Just bring the pudding, water, and jello to a boil
- Fold in the whipped cream until all white is gone
- Use any kind of jello to coordinate with fruits
- Use a deep dish pie crust
- Keep refrigerated for 2 hours before serving after the mixture is poured into cooled pie shell
- Cover any leftover pie and store in the refrigerator
- Line the bottom of the cooked pie crust with fruits and then add the mixture on top
- Add a layer of whipped cream on top first and decorate for Holiday themes with coordinate colors
- The pie will stay fresh for 4 days

Cherry lovers: use cherry jello, vanilla pudding, and fresh chopped fresh bing cherries or maraschino cherries added.
Blueberry lovers: Try using the blue raspberry or lemon jello, vanilla pudding, and fresh blueberries
Orange lovers: use orange jello, vanilla pudding, and fresh orange sections chopped
Banana lovers: use lemon jello, vanilla pudding, and sliced fresh bananas
Raspberry lovers: use raspberry jello, vanilla pudding, and fresh raspberries
Peach lovers: use peach jello with vanilla pudding and fresh sliced peaches.
Mango lovers use mango jello with vanilla pudding and chopped fresh mango

Fun Creations
Get creative with this pie, the skies the limit and you can use any fruits with the basic recipe mixture you choose.
You could even do a fruit medley which would be superb!
If you've never checked all the jello flavors out there in your markets, you will be so surprised to see so many flavors.
Here are some other jello flavors I have tried: blackberry, apricot, mango, strawberry banana, orange, just to name a few!
Just get the same fruits as the jello you choose and follow this recipe.
Pie Crust
Not a baker? No problem, just use a deep dish store-bought pie crust found in the frozen food sections of your grocery store.
You can also use the refrigerated pie crust found in the dairy case.
If you love to bake then try my mom's recipe for pie crust, it's so flaky and a delicious addition for this pie.
Just remember to poke holes in the bottom of the crust before baking so it doesn't puff up while baking or use pie weights.
The Filling
This is one pie filling with a light texture that doesn't have cream cheese in it.
The fruit, whipped cream and jello mixture blend perfectly together to give this pie the perfect sweetness.
It's not overly sweet and when cut it's held together perfectly, without getting watery in any way.
The pie firms up nicely with the addition of the pudding in it.
Off Season
You can mix and match flavors as I said before and I have made another combination that I really like for fall.
I found one of my favorite apple jellos by a jolly rancher brand and used that with vanilla pudding, the same recipe instructions below, just using fresh apples in it.
I love how easy this is with so little cooking involved, just the crust is baked and the mixture has to come to a boil.
The refrigerator does the rest of the work!
The Kids Fight Over the Bowl!
Well, I said kids, but they are really grown men now, funny how that seems to happen overnight.
My two boys went from being little to having a family of their own in a blink of an eye!
The first time I made this, after folding in the whipped cream and pouring the mixture in the pie shell there were remnants left in the bowl.
I made the mistake of asking one of my boys to test it out and he said it was the best pie he ever tasted with strawberries in it besides shortcake!
The other one wanted a taste but he had licked the bowl clean so fast there wasn't a drop left in it.

That was a tell-tale sign I hit the jackpot of desserts.
After I put the pie together and made the pretty arrangement on top with some mint leaves, they were afraid I wasn't going to cut it up!
Luckily it was only for my photos and they were happy to dive into that pie after dinner and ruin how pretty it looked!
I really didn't want to take a photo of the empty tin, you get the picture!
Make two it goes quick!
Needless to say, the pie was gone that night for dessert with 3 grown men and my husband was the third who loved it!
They each had two large pieces!
I did get a fork full out of it, sigh.

First time I read the ingredients I was skeptical, now for years we all totally love love love this recipe.

Last but not least, this can be all made SUGAR-FREE, just substitute all sugar-free ingredients
(jello, pudding, whipped cream) this recipe calls for.
As for the crust omit the white flour and make a lower carb wheat pie crust.
For a completely no flour recipe try using this recipe 1 1/2 cups almond flour, 1/4 cup sweetener like Truvia or Stevia, 1/4 teaspoon salt, 1/4 cup butter melted. Mix together. Press into a pie plate, prick holes in the crust and bake on 335 degrees until browned.
Cool and fill as directed in the recipe card.

This is a strawberry cream pie made with pudding and jello in the mix.

ingredients:
- 1 package of strawberry jello (3-ounce size)
- 1 package vanilla pudding ( the kind you cook 2.75-ounce size)
- 2 cups of water
- 1 teaspoon lemon juice
- 2 cups of whipped topping
- sliced strawberries ( I used around 2 cups) save some for garnish
- 1 deep dish baked pie crust homemade or store-bought cooked and cooled
- Optional: mint leaves for garnishing and more whipped topping
instructions:
How to cook Strawberry Cream Pie
- In a saucepot, add the water, jello, pudding mix. Stir together and bring to a rolling boil.
- Place in a glass bowl and refrigerate until completely cooled and thickened ( it was around 2 hours.)
- Remove from the refrigerator after this is completely chilled and add the whipped topping, lemon juice and around 1 cup of the berries, stir and combine.
- Place some the strawberries (around 1 cup berries) on the bottom of the crust and save a few to garnish on top.
- Pour the strawberry mixture on top of the berry lined crust. Chill around another hour before serving.
- Garnish with berries and mint if preferred.
- This recipe can be made with all sugar-free products.
