Southwest Bean Filling
This is a sauteed filling to make several different kinds of Southwestern meals. This starter filling is great for chili, filling tacos, burrito, fajita, top salads, make soup or chili and much more!

ingredients:
- For this Simple Basic Filling:
- Chicken boneless breast cut into small thin pieces
- 1 cup black beans
- 1 cup corn
- 1- 12 ounce can diced tomatoes
- 2 plum tomatoes diced
- 2 bell peppers sliced thin or 1 can green chilies
- 2 teaspoons of each Chili powder, cumin, granulated garlic or minced garlic
- salt, pepper, cayenne pepper, dried oregano to taste
- Olive oil
- Optional ingredients: white beans, green beans, hot peppers, or any other vegetables you like
- For Chicken Chili
- 1 additional can 28 ounces of crushed tomatoes or tomato sauce for chili
- You also can add cooked ground beef along with the chicken or use all beef and no chicken or make an all vegan chili without meat
- 1//2 cup water or chicken broth if too thick
- pinto, white or kidney beans around 3 cups
- Add more seasoning to taste like cumin and chili powder
- optional: cayenne pepper for heat
- For Soup:
- Follow same instructions for chili ingredients
- Add more broth to make it more liquid or more water.
- Add 2 cups mixed frozen vegetables or canned to the broth
- Salt, pepper, and seasonings to taste
- Simmer 1 hour. Garnish with taco suggestions.
- Tacos and more suggestions:
- Build your own taco station with flour or corn tortilla and shredded cheese add various toppings chopped olives, tomatoes, shredded lettuces, shredded cheese, sour cream, chopped avocado
- Make Nachos using tortilla chips using the same ingredients for topping the tacos toppings.
- Pour the basic recipe over cooked fluffy white rice or cooked pasta,
- Salad Bowls:
- Make a salad bowl using shredded cheddar cheese, black olives, sour cream, salsa, avocado, shredded lettuce salad adding the chicken over the top and crushed nachos

- Saute the chicken in 4 tablespoons olive oil until browned on both sides around 3 minutes or so.
- Add the peppers, beans, and tomatoes.
- Sprinkle evenly with all herbs and spices to taste.
- Simmer until chicken is tender and vegetables are softened.
