This homemade breakfast sausage recipe is fantastic and so darn easy!
Well, I am here to tell you, these are better than anything you will ever buy in a grocery store for sure!
They took about 5 minutes to mix up and viola you will have the best homemade breakfast pork sausage patties
I promise you will never buy them again!
I honestly was skeptical about making them my first time, I really thought they would be very difficult and I don't usually have all the ingredients.
I purposely keep all dried herbs and spices on hand needed to make these anytime and ground pork in the freezer.
I couldn't find dried savory so I looked up the substitutions that are recommended and it said to use dried basil, it worked perfectly.
Fresh buttermilk is a must-have in this recipe.

They Look and Smell Great Cooking!
I know they are just breakfast sausages, but I have to tell you, I truly got excited smelling the aroma that came from this frying pan.
They even tasted better than they smelled or look!
The best part about these leftovers? They freeze well between parchment paper and you can just use as needed!
They reheated perfectly in the air fryer or toaster oven!
I have been making Italian sausage for years and that recipe is easy also!
Frying These in Oil
I really didn't use much oil, they produced enough juices from the pork to only use a few tablespoons, you can adjust as needed.
I only fried a couple at a time, to see if the seasonings were good.
We like a little more heat and black pepper, so I added a tad more in mine.
I suggest to adjust the flavors to how you prefer them as well, cook one, eat it and add and adjust to taste.
Shaping Them Was Easy
The mixture is not runny, it's just perfect.
I used a large tablespoon to shape mine, you can use an ice cream scoop, then flatten them as they hit the heated oil.
Of course, you can shape them by hand but I just used a spoon and used the back of the spoon to smooth any uneven edges as they fried.
They were really easy to add to oil with a spoon.
I used a fork to pull them out after they were done and set them on paper towels to drain the oil off.
You can also air fry these after you spray the air fryer tray with oil spray for another cooking method.
Ingredients Needed
- Buttermilk
- Marjoram
- Nutmeg
- Cooking oil
- Brown sugar
- Sage
- Savory or Basil
- Cayenne pepper
- Ground Pork
- Kosher or sea salt
- Black pepper
Let's Get it Mixed!
You will need a mixing bowl to add the pork and seasonings in.
Add the buttermilk, spices and then the pork and mix together.
I love using buttermilk it keeps these patties so moist and tender just like my Strawberry Buttermilk Skillet Shortcake is when I make it.
Easy peasy, nothing to this.
Time to heat the oil and get frying for the perfect breakfast sausages!
Light Or Dark?
You can fry these to your own taste, we have several picky eaters in our home.
My son loves any meat overcooked, my husband a light brown cooked all the way through of course.
There is no right or wrong way to cook these except pork needs to be thoroughly cooked all the way through.
I made some around 5 to 8 minutes in cooking time and others as long as 14 minutes till dark browned.
Tips
- Only use fresh buttermilk
- You can substitute dried basil or oregano for the dried savory if you can't find it
- Heat the oil to a medium heat
- Fry one, try it, adjust the seasonings to your taste and how dark you want them by frying longer
- leftovers freeze great between parchment paper for later use
- Reheating is perfect in the toaster oven or an air fryer

I don't like to waste anything and this freeze perfectly!
I make the patties on parchment paper on a cookie sheet.
Place the entire cookie sheet in the freezer for about 25 to 30 minutes until set.
Then, I layer the patties on top of one another, leaving the parchment paper between each layer.
Place in a ziplock bag until ready to use another time!

Pork Breakfast Sausage Patties

These are homemade pork breakfast sausages and better than anything you can buy in a grocery store. Easy to make and delicious for any breakfast sausage lover!
ingredients:
- 3/4 cup buttermilk
- 2 1/4 teaspoons kosher or sea salt
- 1 1/2 teaspoon rubbed sage
- 1 1/2 teaspoons brown sugar
- 1 1/2 teaspoons black pepper
- 3/4 teaspoon dried marjoram,
- 3/4 teaspoon dried savory ( you can substitute oregano or basil dried as well)
- 3/4 teaspoon cayenne pepper
- 1/4 teaspoon nutmeg
- 2 1/2 pounds of ground pork butt
- Cooking oil for frying
instructions:
- In a large bowl combine the buttermilk with all seasonings. Add the pork and mix together. Shape into 18 to 20 3 - inch patties.
- In a large skillet heat some canola or vegetable oil in the pan around 4 to 5 tablespoons.
- Heat to medium-high heat. Place the shaped patties in the oil and cook on each side until they are browned and crispy.
- We like some cooked light in color and some very dark but 5 to 6 minutes on each side is cooked for these sausages. Cook around 10 to 14 minutes for very dark ones.
- Serve your breakfast sausages with fried eggs, scrambled eggs or pancakes.
- Note: I added a little more cayenne as we like spicy hot! I would cook one first and add the flavors of herbs you like to your own taste. This was the perfect combination for me except heat!
