This apple cake cup recipe is over 100 years old and been in our family for a very long time.
We grew up with orchards in Upstate New York and apples were plentiful.

Growing up in Upstate New York, we had so many apple trees on our block, we were always making new recipes to change it up over just a delicious apple pie.
My Favorites
My favorites were Granny Smiths or McIntosh.
I loved the Cortland Apples, and so many more depending on what the apple orchards in Upstate New York had on sale.
If we didn't get any apples from the neighbors, we always went and bought a bushel at the orchards back home in Utica, New York.
The Batter
The batter is very thick and almost like a pound cake.
The method is similar to making pineapple upside down cake.
The apples are on the bottom and the batter on top.
So Easy for Entertaining
These little individual apple cups are perfect for entertaining a large party and dinner guests.
You can really dress these up with whipped cream or favorite ice cream.
Sprinkle them with a little cinnamon and sugar, they make an elegant dessert.

Change it Up
Well, as I said before, these do remind me of pineapple upside down cakes, just with apples.
You can change the apples to anything you like.
We have used pineapples, blueberries, cherries, peach and raspberry pie fillings.
If you want to make them from scratch, I have added what we did with fresh fruits to this recipe.
Freeze Them for Later
These apple cups freeze very well.
Just place them on a parchment paper-lined cookie sheet after they cool.
When the are frozen solid, place them in an airtight container.
Take out what you need, thaw and garnish however you want to serve them.

Using A Cake Mix?
I have seen recipes using a cake mix similar to these, I have never tried that.
Mom and grandma made everything from scratch these are totally homemade unless you use pie filling.

Individual Apple Cake Cups

These are an individual apple cake that is made like upside down cakes. They are perfect to freeze and take out when you need them. Serve warm with ice cream or whipped cream.
ingredients:
2 cans of apple pie filling or your favorite kind (I have tried blueberry, peach and raspberry) see recipe below for using fresh fruits
4 tablespoons butter melted
4 tablespoon brown sugar
In a muffin or cupcake tin pan, lightly spray with cooking oil first. Then add a little of the the butter in each cupcake tin. Add brown sugar and stir. Place pie filling on the bottom evenly spread out. I then sprinkle it with cinnamon and sugar mixture on top of the apples
instructions:
Cake recipe:
2/3 cup shortening
1 cup sugar
beat together until light.
Add:
2 eggs
2 teaspoon vanilla
1 cup milk
Mix in dry ingredients until well incorporated and smooth:
2 cups flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
Optional: cinnamon and sugar mixture to sprinkle of top of cake batter
Using a ice cream scoop, place one scoop over the apple mixture you can then sprinkle with cinnamon sugar mixture on top of the batter before baking. Bake for 25 minutes on 350 degree hot oven till browned.
Serve warm. Great with French vanilla ice cream or any whipped cream.
Note: for fresh fruits of any kind instead of pie filling see below:
Homemade fresh fruit fillings: just toss 4 cups of fresh fruits cut up very small IE:peaches and apples with 1/3 cup flour, 1/4 cup brown sugar or more to taste, 1/4 cup water, 1 tablespoon melted butter and 1 tablespoon of lemon juice mix together and place first in pan proceed with same directions using butter and brown sugar on the bottom of the tins.
