Easiest Potato Soup Ever!
You can make this soup within an hour of start to finish.
It's really that simple.
The Vegetables just have to soften, the ham is already cooked, the broth will thicken as it simmers.

When It's the rainy season here in Florida, this is pure comfort soup.
It really doesn't matter how it looks outside when you sit by the window listening to the drops of rain, eating a cup of this soup.
Done So Fast It's Unbelievable!
When I first made this, I was shocked on how fast it cooked.
The secret was the vegetables all being chopped fine.
I actually add the carrots and celery stalk to the food processor for a chunky but very small chopped pieces.
Keep the potatoes a nice size cube.
A Colorful Soup
Potato Soup on it's own isn't very colorful.
The tomatoes, carrots, parsley and celery gives this a rich color broth and so flavorful too!
The soup is so pretty and still shouts comfort.
I love growing all the fresh herbs outside in my garden.
Other Additions
If you don't have any leftover ham from dinner, you can always use cooked bacon, Italian cooked sausage or even kielbasa works good.
A deep smokey flavor is the best enhancement to a potato soup that's plain.
This has no flour in it and naturally thickens with the milk and starch from the potato giving the broth it's richness.
Smoked pork chops are another delicious addition to potato soup, I am sure you can also get creative with whatever you like that smokey and flavorful to add.
Of course if you are counting calories, you can always use cubed chicken breast.
Chicken or Beef?
As I mentioned you can use whatever meat you like to flavor your broth.
Chicken and beef are terrific substitutes in a pinch, I just love the smokey taste of ham or even pork chops.
Lastly you can certainly add more than potatoes and carrots to you soup, there is not set rule here.
Spice it Up
I usually love a little heat in my soup, the hot cayenne pepper really kicks up the flavors.
Feel free to add some cayenne pepper or red pepper flakes.
I leave it out when the little ones come over, they're not fans of spicy foods.

ingredients:
6 cups cubed and peeled potatoes
3 sprigs chopped fresh parsley
1/2 tablespoon salt or more to taste
5 cups water
1 teaspoon granulated garlic powder
2 cloves minced garlic
1 stalk celery finely chopped
1 cup carrots chopped in small pieces
1 cup grape tomatoes
black pepper to taste
2 cups cubes leftover spiral ham or any kind of ham
1 - 12 ounce can evaporated milk I used fat free
1/4 cup cubed butter at the end
optional: 1/4 cup minced onions, cayenne pepper
instructions:
Place the water, potatoes, chopped vegetables, herbs, spices all in a soup pot.
Bring to a boil and add the ham. simmer 20 to 25 minutes or until vegetables are soft.
Add the butter and milk, simmer another 30 minutes
This is great topped with shredded sharp cheddar cheese or any other of your choice.
