Instead of sour cream, add cream cheese, if you don't like carrots, leave them out, I only added a handful.
You can also substitute the heavy cream for coconut milk if counting calories.

Low Carb Keto Cauliflower Mashed Potatoes
prep time: 10 minscook time: 25 minstotal time: 35 mins
This is a recipe for mashed cauliflower that is a substitute for mashed potatoes.
ingredients:
1 head of cauliflower cleaned, cut up and remove stems (steamed or boil with carrots)
1/2 cup finger carrots boiled or steamed (these are optional)
1/4 to 1/2 cup sour cream (I add more or less to taste)
4 tablespoons butter
salt and pepper to taste
optional: pinch of cayenne pepper
2 cloves minced roasted garlic or 1 teaspoon granulated garlic powder
4 tablespoon heavy cream or whole milk
4 tablespoons Parmesan cheese
Parsley for garnish
instructions:
Cook the cauliflower and carrots if using until fork tender. Boil around 20 minutes and 15 minutes if you're using steamed method. A fork should easily go through the vegetables.
Drain if any water, the drier the cauliflower the better.
Place in a bowl and coarsely mash together or for smoother potatoes put through a potato ricer.
Add the cream, sour cream, butter, salt, pepper and garlic.
Stir until evenly coated.
Garnish with parsley.
