Don't you just love the idea of St. Patrick's Day foods? Even if you're not Irish it's so much fun to celebrate for the day.
I love it! I love all the green beer, corned beef, and these cupcakes make the perfect dessert. Making up your mind which one to bake is the hardest part, so make both!

I do usually start the evening off with a great Irish meal.
Corned Beef and cabbage with potatoes and carrots.
Irish coffee, and shamrock cookies.
This year I additionally made both these cupcakes and they were a huge hit at our St. Patrick's Day neighborhood party.
Ingredients You Will Need To Make Them Both!
- For the Chocolate Stout Cupcake:
- unsweetened cocoa, plus more for dusting finished cupcakes
- sugar
- all-purpose flour
- baking soda
- Pinch fine salt
- stout beer (recommended: Guinness)
- butter, melted
- vanilla extract
- eggs
- sour cream
- For the Vanilla Irish Cream:
- butter softened
- white sugar
- egg yolks
- sour cream
- vanilla extract
- almond extract
- all-purpose flour
- baking powder salt
- Irish cream liqueur
Tips
- use cupcake tins lined with pretty green liners
- use a good brand name stout beer
- do not overbeat the batter
- check the middle of the cupcakes using the toothpick method that it comes out clean
- always preheat the oven before baking
- use butter not margarine for best results

Chocolate Stout Cupcakes
- 3/4 cup unsweetened cocoa, plus more for dusting finished cupcakes
- 2 cups of sugar
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- Pinch fine salt
- 1 bottle stout beer (recommended: Guinness)
- 1 stick butter, melted
- 1 tablespoon vanilla extract
- 3 large eggs
- 3/4 cup sour cream
- Cream the sugar and butter together for 2 minutes. Add the beer, eggs, sour cream, vanilla, and blend together. Add all the rest of the dry ingredients into the bowl until well mixed together around 2 minutes. Pour into cupcakes liners and bake at 350 for around 25 minutes until the middle are set and spring back.

- 4 egg yolks
- 3/4 cup sour cream
- 1/2 teaspoon vanilla extract
- 1 teaspoon almond extract
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 6 tablespoons Irish cream liqueur
- Cream the sugar and butter together for 3 minutes. Add the eggs, sour cream, vanilla, and blend together, stir in the Irish cream and almond extract. Add all the rest of the dry ingredients into the bowl until well mixed together around 2 minutes. Pour into cupcakes liners and bake at 350 for around 25 minutes until the middle are set and spring back.
- I use the same frosting for both:
- 1 - 8 ounces package of cream cheese softened
- 16 ounces of powdered sugar
- 3/4 cup to 1 cup of heavy cream
- Beat on slow speed, with an electric mixer, the cream cheese until light. Slowly pour in the heavy cream beat at a slow speed. Gradually add the powdered sugar stir until smooth. Keep refrigerated until ready to use.
