She would run out of sausage on her menu all the time and after learning how to make these easy sausage patties I can certainly see why they were gobbled up quickly.
Back in the 1960s when I was growing up everything was made from scratch and I have tried to reproduce many of her recipes, this is pretty spot-on perfect.
This sausage is still keeping her memory alive and now my own kids learned how to make this.
With some additions added like peppers, onions if you like and even slices of tomato, you can have a sausage meal all in one pan.
We sometimes even add potatoes to this sausage pattie meal and leftover patties are great adding a Traditional Italian Sunday Tomato Sauce.
Baked, fried, grilled, or however you like sausage this recipe is super easy to make!
Mom also had a hand crank manual machine to make would make sausage links, patties, skewers, and even keep some loose for her homemade sausage rolls!

The Sausage Recipe is Adapted
- make them into any shape logs without the tubes, patties, meatball
- add them to tomato sauce
- make a submarine sandwich
- great with eggs
- saute hot peppers with sausage and onions
- these can be baked, fried, air fried or grilled
Grilled. Baked, Air Fry
- Grilled: Heat Grill on medium heat, place the patties on oil-sprayed grates, and cook around 5 minutes on each side or until they have a nice char on the outside
- Baked: Line a casserole or deep baking sheet with oil-sprayed parchment paper and bake at 400 degrees for around 35 minutes flipping once
- Air Fry: Set the air fryer to 375 degrees and oil spray the tray or basket (you can also use foil sprayed with cooking spray) air fry for 16 minutes
- Pan Fry: Just add a few tablespoons of oil in a cast-iron skillet and fry until crispy on the outside or how you like your sausage patties, pork should always be cooked all the way through

Mom's Homemade Italian Sausage Pattties

This is mom's homemade sausage recipe and video, you will never buy sausage again! It's so easy to make!
Ingredients
- 2 to 3 lbs. of ground pork mixed with pork fat (I usually use a pork shoulder 70/30 ratio or butt ground)
- 1 tablespoon fennel seed
- 2 tablespoons paprika
- 2 teaspoons minced garlic
- 1 tablespoon olive oil
- 1 teaspoon or more of salt and pepper
- 2 or 3 tablespoons red or white wine
- 3 tablespoons grated cheese
- 2 tablespoons Italian seasoned bread crumbs
- parsley fresh chopped around 2 teaspoons
- For sweet sausage use the above recipe and omit the cayenne pepper
- For hot sausage add 1/2 teaspoon of ground cayenne pepper per pound.
Instructions
- Mix the ground pork in a bowl with all ingredients shape into whatever you want, loaves, patties.
- Fry on medium heat, bake or grill.
- You can also bake at a 400-degree hot oven until browned placing them on parchment paper or a greased pan for around 30 minutes or until browned and starts to look crispy on the outside. Add potatoes, onions, peppers, and whatever else you like for a one-pan meal.
- If making skewer, just use prepared kebab sticks and thread the meat onto them.
- Grill until browned. If you would like them baked or fried, shape into little loaves, cook them then thread on skewers.
- Note: You can also Air Fry the sausage.
