Cake Mix Cookies
1-18 ounce packaged cake mix (I used funfetti however you can use whatever you like)
2/3 cup canola or vegetable oil
2 eggs
Homemade frosting or canned ( I used vanilla)
Shredded coconut ( I put through a food processor to be fine)
INSTRUCTIONS:
Mix the cake mix of choice in a bowl with 2 eggs and oil until blended evenly together.
Drop by tablespoons full onto parchment or silpat mat. Bake in a 350 degree preheated oven until set. I take them out when the edges start to brown around 8 minutes.
Cool on wax paper.
Frost, decorate with coconut garnish.
