Leftovers are great, add a little barbecue sauce on the leftover pork and it's so tender it perfect for a great sandwich.
Another great use of leftovers is to make a gravy with the juices and pour over noodles or any kind of pasta.
Saute some mushrooms and peppers and again another great use of pork leftovers for a great sandwich!

Slow Cooker Pork Roast
instructions:
Slow Cooker Pork Roast Recipe
1 - 3 to 4-pound pork roast
1 bell pepper
2 sweet potatoes cubed
2 white potatoes cubed
fresh parsley, fresh rosemary, fresh basil
dried oregano
salt, pepper to taste
red pepper flakes for a little heat
1/4 cup beef broth, coke soda or white wine
Optional: two sliced, peeled and cored apples, 1 cup finger carrots, baby whole onions
Spray your slow cooker with cooking spray or use a liner. Add the pork first, vegetables around it then evenly top with all the herbs and spices.
Carefully pour the liquid if choice around the bottom.
Cook on low 8 hours or 6 hours on high.
