Quick and Easy Pasta with Broccoli, Chicken, and Lemon Dish
- Prepare any pasta to the package instructions
- steam the broccoli
- use boneless cooked chicken cubed or saute boneless cubed breast
- add to a frying pan saute garlic and heat the broccoli and chicken to coat
- add butter, wine, and chicken broth and simmer
- stir in the lemon juice, lemon zest, salt and pepper
- toss all together and serve in a large pasta bowl

Chicken Broccoli Pasta with Lemon Sauce
This is a delicious lemon butter sauce that pairs perfectly with chicken and broccoli over any cooked pasta.

Ingredients
- 1 pound any kind of shaped pasta you prefer
- 8 cups broccoli florets fresh or frozen
- 3 cloves of minced garlic
- 2 large boneless chicken breasts cut into small pieces( or use boneless rotisserie chicken)
- 2 tablespoons olive
- salt and pepper to taste
- Optional: red pepper flakes for a little heat
- 1/2 cup Pinot Grigio White Wine or use chicken broth
- 3 tablespoons of butter
- 1 cup of chicken broth
- 2 tablespoons extra virgin olive oil or more if needed
- Grated Pecorino Romano Cheese or Parmesan grated
- Freshly chopped basil for garnishing
- 2 teaspoons of freshly grated lemon zest
- 3 tablespoons of lemon juice freshly squeezed or more to taste
- Note: double the recipe for a larger amount of sauce
Instructions
- In a large 5 quart pot, cook the pasta to package instructions, drain, and toss with the extra virgin olive oil. Set aside and keep warm.
- Either steam or microwave the broccoli drain and set it aside.
- In a large frying pan saute the chicken in olive oil for around 4 minutes on each side to lightly brown adding, salt, pepper to taste, and red pepper flakes if using.
- Add the steamed broccoli (add more olive oil if needed) then the garlic and saute for 2 more minutes.
- Add the garlic and saute for 2 more minutes.
- Remove the chicken mixture and set aside in a bowl and keep it warm.
- Add the butter into the same pan and scrape any browned bits then add the chicken broth, and wine ( or broth if using all broth) and simmer for around 3 or 4 minutes.
- Stir in the lemon and zest (adding more salt and pepper to taste).
- In a large serving bowl, add the chicken mixture and toss it with the buttery sauce.
- Serve with grated cheese on top and red pepper flakes if using.
- Garnish with torn fresh basil.
