Suggestions:



  • I have used, Nutella, and whipped cream with hazelnuts and bananas, which is a favorite.
  • Fresh fruits and lemon curd as shown and my favorite is fresh red raspberries with raspberry puree and a coconut cream filling or no-bake cheesecake filling.
  • When we have a large gathering, I can make these a day ahead of time. I will make a double batch usually for those who want more than just one.

Meringue Cups are a dessert cup filled with delicious fresh fruits and an elegant dessert love easy on your waistline and low in calories. Perfect dessert to serve guests.

Ingredients:

  • 2 egg whites
  • 1/4 teaspoon cream of tartar
  • 1/4 teaspoon pure vanilla extract
  • pinch of salt
  • 1/2 cup sugar

Instructions:

  1. Beat the whites in a heavy-duty electric mixer until soft peaks form with salt, vanilla, and cream of tartar.
  2. Once the peaks are formed start adding the sugar 1 tablespoon at a time.
  3. The meringue is ready when the whites do not slide when tilting the bowl.
  4. Using an ice cream round scoop, drop 6 meringues on a Silpat mat or parchment paper.
  5. With the back of a spoon, make an indent in the center and keep the formation around.
  6. Bake at 250 degrees preheated oven for 35 minutes.
  7. Shut the oven off and leave the meringues in for another hour before removing from the oven.
  8. These will last 2 days in an airtight container.
  9. Filling suggestions: Here is my recipe for lemon curd or use any flavor pudding, your choice of fresh fruits with whipped cream, Nutella with chopped hazelnuts and whipped cream, lemon curd with fresh raspberry, blueberry as shown.
