Parmesan Penne Vegetable Pasta

This is a delicious summer style light meal with fresh vegetables and steam broccoli over pasta. It has a butter wine sauce toss over perfectly seasoned pasta.
Ingredients:
- 2 wedge cut plum tomatoes
- 4 or 5 pieces or torn Fresh Basil leaves
- 2 cups Steamed Broccoli
- 1 Sliced and cleaned green pepper
- 1 tablespoon of Sliced Kalamata Olives
- 4 tablespoons Olive oil
- 2 cloves fresh minced garlic
- 8 ounces Penne Pasta cooked to package instructions
- 1/2 cup Pinot Grigio White wine
- 3 tablespoons Butter
- salt, pepper, and cayenne to taste
- Grated Pecorino Romano Cheese
- Optional: 1/2 teaspoon Italian seasoning, oregano, red pepper flakes or oregano, 1/2 cup feta cheese, or other kinds of cubed cheeses you prefer
Instructions:
- Cut the tomatoes, chop the peppers and add to a bowl, set aside.
- Place the fresh basil, olives, and steamed broccoli in the bowl. toss with 3 tablespoon olive oil or melted butter.
- Salt, pepper, and season to taste.
- In a small fry pan, saute two teaspoons of minced garlic on low with 1/4 cup olive oil just till fragrant around 1 minute.
- Add 1/4 cup white wine and 2 tablespoons of butter to this.
- Simmer 3 minutes.
- Cook pasta to package instructions drain.
- In a large serving dish to add the pasta and the vegetables into the pasta mixture.
- Pour the garlic wine sauce over the pasta and vegetables.
- Serve immediately. Sprinkle with cheeses.
